  • Choose pork bones that have a natural reddish-pink color; when you press on the meat with your hand, it should feel firm, indicating good quality pork bones.
  • Choose pork bones of moderate size; if they are too small, they are usually from young pigs, have little meat, and do not provide sweetness when cooked.
  • Do not buy pork bones that are purple or have an unusual smell or discharge, as these are signs that the pork bones have been stored for too long and are no longer fresh.

  • Prepare the ingredients

    To eliminate the unpleasant smell and clean the pork bones, soak them in diluted salt water for about 10 minutes and then rinse thoroughly with several changes of water.

    Blanch the beef meatballs in boiling water to clean them. Then cut them in half or quarters depending on the size of the meatballs.

    Wash the green onions and coriander, remove the roots, and chop finely. Peel the white radish, wash it clean, and cut it into bite-sized pieces.

    Wash the tomatoes and cut them into wedges.

  • Marinate the pork bones

    Put the pork bones and white radish into a large bowl, marinate with 3 minced shallots, and add 1 teaspoon of each seasoning, including: salt, pepper, sugar, monosodium glutamate, and seasoning powder.

    Use chopsticks to mix well and marinate for about 15 – 20 minutes for the pork bones to absorb the seasonings.

    Place a pot on the stove, add 1 tablespoon of cooking oil to heat, then add pork bones and white radish to the pot and stir-fry for about 5 minutes until the bones are slightly cooked.

    Then pour 2 liters of water into the pot and simmer the bones on low heat for about 30 minutes. After that, add each meatball, beef ball, and tomato and cook for another 5 minutes until the water boils again.

    Season the broth with 2 tablespoons of fish sauce, 1 tablespoon of seasoning, 3 tablespoons of sugar, 1 teaspoon of salt, then stir well. Adjust the seasoning to taste and turn off the heat.

    Blanch vermicelli in boiling water, add chopped scallions, a little ground pepper, and pour the broth over to enjoy right away!
