Prepare the ingredients
With 500g of beef ribs, you should wash them clean with diluted salt water for about 10 minutes, then rinse thoroughly under running water and let drain.
Tips for cleaning beef ribs:- To clean beef ribs effectively and eliminate any odor, you can briefly dip the ribs in boiling water for about 3 – 4 minutes, then remove and rinse with cold water.
- Additionally, when boiling water to blanch the ribs, you can add a little white wine to the blanching water, as wine has a very effective odor-neutralizing ability.
Put a pot of water on the stove, when the water boils, add the beef ribs to blanch for about 5 – 10 minutes to eliminate the odor, then remove them.
Next, place a pan on the stove, add 25g of pho seasoning to the pan and toast on low heat for about 3 – 5 minutes, then turn off the heat.
Then, add 3 pieces of tofu skin to the hot oil and fry for about 5 – 10 minutes until the tofu skin expands and becomes crispy.
Finally, clean 200g of water spinach, 100g of straw mushrooms, 100g of enoki mushrooms, and 2 pieces of tofu, then wash with water and drain.

Cook the broth
Put a pot of water on the stove, wait until the water simmers, then add the beef ribs to the pot. Next, add 1 onion, 2 slices of ginger, and 2 stalks of roasted lemongrass.
Then, add the toasted pho seasoning to the pot and stir well. Cook the broth on low heat and simmer for about 1 hour.
After 1 hour, filter the broth through a sieve to extract the clearest and smoothest liquid.
