At the same time, place a pot on the stove with 1 liter of water and bring it to a boil over high heat. When the water starts to boil, add all the drained beef tendon to blanch for about 7 – 10 minutes.
Finally, when you see foam rising to the surface, turn off the heat, and rinse the beef tendon again with clean water, then drain.

- Method 1: The simplest way is to use ginger that has been crushed and roasted, then rub it over the entire surface of the beef tendon for 3 – 5 minutes.

Prepare beef bones

Once the water is boiling, add all the prepared beef bones and blanch them for about 7 – 10 minutes. When you see bubbles rising to the surface, turn off the heat, and rinse the beef bones 1 – 2 times with clean water, then drain.

Stir-fry beef tendons and bones
Next, place a new pot on the stove with 3 tablespoons of cooking oil and heat it over high heat. Once the oil is hot, add 300g of beef tendons and 500g of beef bones, using chopsticks to stir-fry evenly for about 7 – 10 minutes.
Then, season with 1 tablespoon of beef stew seasoning, and stir-fry for another 5 minutes.
Tip: To save time when simmering, you should stir-fry the tendons and bones first to brown them a bit! -
Cook the broth
Using the same pot, add 2 liters of water, 5 stalks of lemongrass cut into pieces, 3g of star anise, and 3g of cinnamon, then cook for 1 – 2 hours.
During this time, continuously use a ladle to skim off the foam until the ingredients are soft, then season to taste and turn off the heat.

After that, strain the broth to remove the star anise and cinnamon, then transfer the tendons, beef bones, lemongrass, and broth to a new pot to complete!
