You soak the dried bamboo shoots in water for about 30 minutes to soften them. Then you tear the bamboo shoots into bite-sized pieces, discard the tough parts, and wash them clean.
Blanch the bamboo shoots in boiling water for about 3 – 5 minutes to remove toxins, then take them out and rinse with water once more before proceeding to cook.
Peel the onion and cut it into a cross shape, then peel and slice the shallots. Clean the green onions and cilantro by removing the damaged leaves, discarding the roots, and cutting the tops. Chop the green onions and cilantro finely.
