For fresh tuna:
- You should choose tuna with clear, shiny eyes, bright red gills, and skin that is not torn or scratched.
- Additionally, when buying tuna, you should select those that have good elasticity when touched and do not have an unpleasant fishy smell.
- Avoid choosing tuna with sunken eyes, soft, mushy flesh, as these are fish that have been caught for a long time and will not taste good anymore.
For frozen tuna:
- You should choose tuna with an expiration date closest to the purchase date. Typically, the best tuna is caught within a month.

Prepare the tuna
To remove the fishy smell from the tuna, after cleaning, rub salt evenly around the tuna and then rinse with clean water and let it drain.

Prepare the other ingredients
Wash the tomatoes with water and cut them into wedges.
For the pineapple, you can simply buy pre-peeled pineapple at the supermarket or ask the seller to peel it for you, when you get home, just rinse it with water and cut it into bite-sized pieces along the peeling line of the fruit.
After removing the roots, wash the green onions, then use a knife to chop them. The chili can just be sliced. Peel the garlic and mince it.

Sear the fish
Place a pan on the gas stove, then add about 100ml of cooking oil along with 1/2 of the minced garlic and sauté over medium heat for about 1 minute until the garlic is fragrant.
Add the drained fish and fry for about 5 minutes until the tuna is golden brown on both sides, then turn off the heat and transfer the fish to a plate.

After that, stir-fry until the tomatoes and pineapple are softened, then add water (about 300ml) until it covers the tomatoes and pineapple, then stop.

After you immerse the tomatoes and pineapple, you add the fried tuna (golden on both sides) and stew it over medium heat for about 3 minutes until the stew water boils.
Add 5 tablespoons of fish sauce, 2 tablespoons of sugar, 1 tablespoon of monosodium glutamate, and 1 tablespoon of seasoning powder, then continue cooking for about 10 – 15 minutes on low heat for the fish to absorb the flavors.
