Ingredients for Sweet and Sour Tuna Stew For 4 people

Tuna 400 gr (1 fish) Pickled mustard greens 200 gr Shallots 2 bulbs Garlic 1 clove Cooking oil 2 tablespoons Oyster sauce 2 tablespoons Chili powder a little Fish sauce 1/2 tablespoon Common seasoning a little (Sugar/ ground pepper/ seasoning powder)

How to choose fresh ingredients

How to choose fresh tuna

  • You should choose fish with bright red gills, large round and clear eyes.
  • Gently press on the belly of the fish; if it is fresh, it will have good elasticity and return to its original state without being dented.
  • Additionally, you can use the pinprick method to check the freshness of the fish; the redder the fish meat, the tastier it will be.
  • Avoid buying fish with pale gills, sunken eyes, or skin peeling away from the flesh, as this may indicate the fish has been frozen for too long or transported excessively.

How to choose delicious, quality pickled mustard greens (pickled vegetables)

  • You should choose pickled mustard greens that are a slightly yellowish green, with intact leaves that are not torn. Delicious pickled mustard greens will have a natural fermentation smell, and the brine will be clear.
  • Avoid choosing pickled mustard greens with yellowing leaves, an unusual foul smell in the brine, and cloudy water with tiny white specks.
  • If you are not confident in buying pickled mustard greens from outside, you can refer to the recipe for making pickled mustard greens that TasteVN shares, which is both delicious and ensures hygiene and safety for your family’s health below.

How to prepare Sour Pickled Tuna

  • Prepare the tuna

To eliminate the fishy smell of the tuna, you can rub a bit of salt on the fish, rinse it clean, then cut it into bite-sized pieces and let it drain. To save time, you can ask the seller to clean and slice the fish for you.

Tips to eliminate the fishy smell of tuna
    • Method 1: After cleaning the tuna, soak it in diluted salt water or rice water for about 15 minutes, then rinse it again, and it’s ready to be cooked.
    • Method 2: You can soak the fish in vinegar mixed with cold water or lemon juice for about 10 minutes, then rinse with clean water.
    • Method 3: After cleaning the fish, marinate it with white wine diluted for about 2 minutes, then pat it dry to limit the fishy smell.
    • Method 4: Soak the fish in a mixture of water with crushed chili, ginger, onion… for 10 minutes, then rinse with water.

  • Prepare other ingredients

The pickled mustard greens should be washed thoroughly with water about 2 – 3 times, then squeezed dry to reduce the sourness, and then cut into pieces about 1 finger length using a knife.

  • Cook the fish

First, place a pot on the induction stove, add 2 tablespoons of cooking oil and heat over medium heat. When the oil is hot, add garlic and shallots to sauté until fragrant.

Next, arrange the tuna in the pot, add some seasonings including: 2 tablespoons of oyster sauce, 1/2 tablespoon of salt, 2 teaspoons of seasoning powder, along with a little chili powder to taste depending on your family’s preference for spiciness.

Next, add about 2 – 3 tablespoons of pickled mustard greens brine, cook for about 2 minutes, then flip the fish over on low heat to allow it to absorb the seasonings evenly.

Keep the pot on the stove for about 5 minutes, then add the pickled mustard greens and season with about 1.5 tablespoons of sugar, 1/2 tablespoon of fish sauce, then cover and simmer the fish on low heat for 15 minutes. Finally, just taste and adjust the seasoning to your family’s preference and turn off the stove to enjoy.

Note: If you do not have pickled mustard greens brine, you can use plain water to cook the fish.
