How to prepare Fake Pig Trotters (recipe shared by users)

  • Prepare the ingredients

    After buying cilantro, cut off the roots, wash it clean, and chop it finely.

    The vegetables to accompany the dish will include aromatic herbs and shredded banana flower; you should wash them thoroughly with water multiple times to ensure safety, then place them in a basket to drain.

    In addition to the two types of vegetables above, you can also choose any other vegetables you like!

    For 50g of fermented rice, you will squeeze out the liquid to prepare the dish and discard the rice residue. You can use fresh coconut water from a coconut or bottled coconut water.

  • Prepare and Marinate Pork Hock

    Clean the pork hock thoroughly with water, then cut it into bite-sized pieces (about 1/2 of a hand width). Next, briefly grill the outside of the pork hock over a flame or you can also use a torch to lightly scorch it, then wash it clean again.

    Next, place the pork hock into a bowl to marinate with ingredients including: 100g of finely ground galangal, 50g of shrimp paste, fermented rice water, 2 teaspoons of turmeric powder, and mix thoroughly so the pork hock absorbs the spices.

    You should marinate the pork hock for about 1 hour, or for better flavor, marinate overnight and keep it in the refrigerator!

  • Making fake pig trotter

    Place a pan on the stove, add 100ml of cooking oil and put the pig trotter in to fry lightly over medium heat. Then, you will continue to add 300ml of fresh coconut water into the pan and bring it to a boil over medium heat.

    To make the broth tastier, remember to use a ladle to remove the foam rising to the surface, then add 1 tablespoon of rock sugar, 1/2 tablespoon of seasoning powder, 1/2 teaspoon of monosodium glutamate and stir well.

    Cook for 7 – 10 minutes until you see the coconut water slightly reduce, then add 1 bowl (rice bowl) of filtered water and continue to simmer until the pig trotter is tender over medium heat. Adjust the seasoning to suit your and your family’s taste!

    When you see the dish boiling strongly one more time, you can turn off the heat and sprinkle chopped cilantro on top to enjoy.

    The imitation pig trotters will have a beautiful golden color from turmeric once completed. The trotters are moderately tender, marinated to absorb the extremely delicious and appealing spices, making them very appetizing.

    When eating this dish, you should enjoy it while it’s still hot to ensure the full flavor, and it should be served with fresh noodles and raw vegetables for a wonderfully delicious meal!

How to prepare Fake Pork Leg

  • Prepare the pork leg

    Hang the pork leg using wire and use a torch to scorch around until the pork leg turns golden brown, then chop the pork leg into small bite-sized pieces. Rinse with water to clean off any dark spots on the skin.

    How to clean the pork leg, remove odor

    • Method 1: Blanch the pork leg in boiling water for about 2 – 3 minutes, then rinse with cold water.
    • Method 2: Use 2 tablespoons of lemon juice (vinegar, alcohol) to rub on the surface of the pork leg, let it sit for about 2 – 3 minutes, then rinse thoroughly with cold water.
    • Method 3: Use coarse salt to rub and scrub the pork leg, then wash it thoroughly.

    Peel and finely chop the shallots and garlic. Use 1 stalk of lemongrass to finely chop, and cut the remaining 2 stalks into sections and crush them.

    Boil the peanuts in hot water for about 10 minutes until cooked, then remove and drain. Peel the galangal, wash it clean, and slice it into thin pieces.

  • Marinate the pig trotter

    Add sliced galangal with 2/3 of the minced onion and garlic, 5 tablespoons of shrimp paste, 3 tablespoons of fermented rice, 1 tablespoon of turmeric powder, 5 tablespoons of sugar, 1 tablespoon of monosodium glutamate into a bowl, mix well and marinate for about 30 minutes for the pig trotter to absorb the spices.

    Add 1 tablespoon of cooking oil with the remaining minced onion and garlic into the pot, sauté until fragrant, then add the smashed lemongrass and the marinated pig trotter.

    Sauté over medium heat for about 3 – 5 minutes until the pig trotter is browned, then pour in 2 liters of boiling water, reduce the heat, and cook for about 30 minutes before adding the boiled peanuts. Mix well and cook for another 10 minutes, adjust the seasoning to taste, then turn off the heat.

How to choose fresh and delicious pork knuckles

  • To make the fake pork knuckle dish tastier, you should choose the front pork leg because the front leg is more active, resulting in thinner, softer, sweeter meat with more sinews than the back pork leg.
  • In addition, good pork knuckles are usually firm, have high elasticity, with even muscle fibers, and the hooves should remain intact without being loose.
  • When buying, you should choose pieces of pork knuckle that have a bright pink color and no unusual odor.
  • Avoid buying pork knuckles that have water retention inside, have an outer membrane, and when cut, the meat releases yellow fluid and has white spots on the meat as this may indicate that the pig has been infected with dangerous rice parasites if consumed.
