How to choose fresh ingredients
How to choose fresh tuna fillets
- Choose fillets that have a slightly dark red color but bright, without bruises. If you press on the fillet and feel it bounce back and firm, then the fish is still fresh.
- You should choose whole large fillets rather than those that have been cut into smaller pieces.
- For frozen fillets, pay attention to the quality of the packaging to ensure it is still vacuum-sealed and not covered in thick frost on the outside.
- You can also buy live fish to fillet yourself. For live fish, you should choose tuna with shiny skin, clear eyes, and a good bounce when touched.
How to choose fresh shrimp
- You should choose fresh shrimp with transparent shells that still have a slight sea smell, not fishy or with dark spots and inconsistent colors.
- Avoid choosing shrimp that are slimy, have bodies bent into a circle instead of being straight as usual.
- Additionally, fresh shrimp usually have tails that are tightly folded together and legs that are firmly attached to the body, with the head not falling off from the body.
How to choose fresh and delicious tomatoes
- You should choose tomatoes with a bright red skin, a smooth surface, without scratches or bruises.
- Prioritize tomatoes with fresh green stems that are firmly attached to the body of the fruit.
- Avoid tomatoes that are wilted, have many black spots on the surface, and leak water when pressed.
Where to buy sour and spicy hot pot sauce?
To find sour and spicy hot pot sauce, you can visit grocery stores, spice stalls at traditional markets, supermarkets, or order from reputable e-commerce websites.
How to prepare Ocean Tuna Hot Pot
-
Prepare tuna and shrimp
To remove the fishy smell of tuna, use a little vinegar mixed with water, soak the fish for about 5 minutes, then rinse with clean water and place in a colander to drain. Next, cut the fish into bite-sized pieces.
For the shrimp, trim the antennae and legs, then rinse with diluted salt water and wash again with clean water, then drain in a colander. After that, carefully peel off the shrimp shells.
-
Prepare the vegetables
For the pineapple, carefully peel off the skin and eyes, wash it clean, then cut into thin slices about 1/2 finger length. For the tomatoes, remove the stem, wash them clean, and cut into wedge shapes.
For the shiitake mushrooms, cut off the stem, then soak the mushrooms in a diluted saltwater mixture, then drain in a colander and chop into small pieces.
As for the accompanying vegetables including celery, herbs, cilantro, basil, and watercress, clean them, soak in salt, then rinse with water 2 – 3 times until thoroughly clean, then arrange them in a colander to drain.
Wash the lime leaves thoroughly.

Cook the hot pot broth
To cook the hot pot broth, add 2 tablespoons of cooking oil into a pot, wait for the oil to heat up, then add 2 tablespoons of minced lemongrass, 1 tablespoon of minced garlic, and 7 lime leaves, stir until fragrant, then add the tomatoes and pineapple.
Continue to stir to ensure the pineapple and tomatoes cook evenly, after about 3 minutes, add about 1 liter of water into the pot.
At this point, place 20g (1 tablespoon) of tamarind in a bowl, pour in a little hot water, and gently mash to extract all the sour pulp, then strain out the seeds.
Then pour this tamarind juice into the broth, stir well, and cook for another 5 minutes.
Add 2 tablespoons of sour and spicy hot pot sauce into the broth, season with 2 teaspoons of salt, 2 teaspoons of sugar, and 1 teaspoon of seasoning powder, stir gently, cook for another 5 minutes, and adjust the seasoning to suit your family’s taste before turning off the heat.
