How to choose fresh shrimp
- Choose shrimp with shiny shells, firm bodies, heads that are tightly attached to the body, legs firmly attached to the body, and firm flesh.
- Avoid choosing shrimp that are slimy or those with legs that have turned black as these are signs that they are no longer fresh.
- Do not buy shrimp with tails that are fanned out, loose, missing tail fins, and not neatly arranged together as this may indicate that the shrimp were caught a long time ago and have been soaked in preservatives.
How to choose fresh and delicious pumpkin
- For round pumpkins, choose those that are slightly flattened but round and firm. For hallowed pumpkins, select those that are evenly tapered from the top and gradually bulge out towards the bottom.
- It is recommended to buy pumpkins with a dark brown skin, which may be rough but should not have many black spots or deep dents.
- Additionally, pay attention to choosing those with a stem about 2 – 5cm long (pumpkins with shorter stems may rot faster).
- Choose heavier pumpkins that feel solid when lifted. Good and delicious pumpkins often have two layers of skin; beneath the rough brownish-yellow outer skin is a green layer, and the flesh should be bright orange-red, looking fresh without being dry or spongy.
- Avoid selecting pumpkins with any bruised or rotten spots on the surface, and do not buy those that feel light because they may be hollow inside and not tasty.

How to Make Pumpkin Shrimp Soup

Prepare the shrimp
After buying the shrimp, wash it with diluted salt water to eliminate the fishy smell. Then, peel off the head and all the shells to get the shrimp meat, keeping the heads to make the broth.
Next, use a knife to make a slit along the back of the shrimp or use a toothpick to remove the black vein from the shrimp’s back. Rinse the shrimp one more time to clean, then use a paper towel to dry the shrimp.
Put the shrimp heads in a pot with 1/2 tablespoon of cooking oil and sauté for about 3 minutes over medium heat.
When the shrimp heads turn orange-red, add 400ml of water to cook the broth for about 10 – 15 minutes.
Tip: To make the broth tastier and clearer, you should skim off the white foam that rises to the surface while cooking.After boiling the broth for about 15 minutes, remove the shrimp heads. At this point, add the shrimp meat and blanch for about 3 – 5 minutes until cooked. After blanching, remove the shrimp meat and cut it into small pieces.

Prepare other ingredients
You peel 1/2 of an onion and then chop it finely.

Cook and blend the pumpkin mixture
Add 1/2 tablespoon of cooking oil to the pot, heat the oil until hot, then add the onion and sauté until fragrant, next you add the pumpkin and sauté together until the pumpkin is firm.
Then, you add 350ml of cooked shrimp stock into the pot with the pumpkin and simmer over medium-low heat for about 15 minutes.
When the pumpkin is soft, add 50ml of unsweetened fresh milk and 100ml of Whipping cream, at this time stir well and wait for the pumpkin mixture to boil. Next, blend the pumpkin mixture using a blender.
Once the pumpkin is blended, return it to the pot and add 3/4 of the chopped shrimp and season with 1 teaspoon of seasoning powder. Stir the pumpkin shrimp soup mixture well and cook for an additional 1 – 2 minutes, then adjust the seasoning to taste.

Scoop the pumpkin shrimp soup into a bowl, sprinkle some remaining shrimp on top of the soup, and add parsley on top to serve.
