For dried shiitake mushrooms
- Choose mushrooms that are not broken and have a light brown cap (generally, there is not much change in color when the mushrooms are dried).
- In particular, pay attention to the smell, which should not be musty or have a strange odor, and there should be no white mold spots on the mushrooms.
For fresh shiitake mushrooms
- Fresh shiitake mushrooms look like an umbrella, not bruised. You should choose mushrooms of moderate size, with short stems, a tightly closed cap, and a slightly yellow-brown color.
- Avoid choosing caps with dark brown color as they could be poisonous; however, be flexible in your selection because typically, ripe shiitake mushrooms also have a dark brown color. Additionally, they have a distinctive, natural aroma.

Soak the glutinous rice
You put 500g of glutinous rice into a basin and soak it in water for at least 4 hours.

The dried shrimp should be soaked in cold water for 10 minutes, then drained and rinsed thoroughly.

Tips for cleaning shiitake mushrooms:
For dried shiitake mushrooms:
- Method 1 (soaking): Soak the mushrooms in water for about 1 – 2 hours, then rinse with clean water and drain before cooking. To make the mushrooms swell faster, you can soak them in water at 60 – 80 degrees Celsius for 7 – 10 minutes.
- Method 2 (boiling mushrooms): Rinse the mushrooms briefly in clean water, then boil them in a pot of boiling water for about 3 – 5 minutes.
Note: No matter which method you use, you should gently rub the mushrooms with your hands to remove all dirt, then squeeze out the water and let them drain before cooking.
For fresh shiitake mushrooms:
- Method 1 (boiling mushrooms): Use a knife to cut off any dirty stems (if any), then boil the mushrooms in a pot of boiling water for about 3 minutes, and drain.
- Method 2 (soaking mushrooms): You can soak the shiitake mushrooms in warm water for about 1 – 2 minutes to remove all dirt and sawdust. Then rinse with cold water and cut off the stems to help clean the mushrooms. You can also rinse the shiitake mushrooms with rice washing water to remove the pungent smell and help retain their natural flavor.
- Method 3 (washing mushrooms): After cutting off the dirty parts from the base, soak them in diluted salt water for 2 minutes, then rinse thoroughly with water.
Note: You should clean the mushrooms thoroughly so that the shiitake mushrooms do not have a strong odor, which can be unappetizing for some sensitive individuals.

Stir-frying ingredients
Add oil to the pan and sauté minced garlic until fragrant. Then add shiitake mushrooms, dried shrimp, and Chinese sausage to stir-fry together. Season the pan with 1/4 teaspoon of salt and 1/2 teaspoon of sugar.
Stir well until all ingredients are evenly cooked, then turn off the heat.

Cooking sticky rice
Add the stir-fried ingredients and sticky rice into a mixing bowl and mix well. Then transfer everything into a steamer, using chopsticks to create holes for steam to escape so the rice cooks evenly. Cover and steam for 50 minutes.
After 50 minutes, open the lid and add 1/2 teaspoon of sugar and 1 tablespoon of soy sauce to the pot of sticky rice, then mix well and continue steaming for another 10 minutes.
