Seaweed noodles are a very vegetarian dish that is incredibly appealing due to the combination of the natural chewy sweetness of seaweed, mushrooms, and the light sweetness of the broth. Kombu seaweed 10 grams Dried seaweed 8 sheets Wakame seaweed 2 grams Oyster mushrooms 80 grams Shiitake mushrooms 10 grams Tempura flour 100 grams Onion 1 bulb Coriander roots 8 stalks Carrot 1 bulb Ripe pineapple 2/4 fruit Cassava root 1 bulb Tomato 1 fruit Seasoning 10 grams (Vegetarian seasoning/salt/sugar)

How to choose fresh, delicious mushrooms

For fresh shiitake mushrooms

  • You should choose shiitake mushrooms that have bright colors, a distinctive fragrance, caps that are moderately curled and slightly yellow-brown. The stem should be firm, with uniform color, and the mushroom cap should have evenly spaced, beautiful, and dry gills.
  • Avoid choosing shiitake mushrooms with white milky cuts or brownish spots, as these are signs of toxic mushrooms.
  • Steer clear of mushrooms that have blemishes or wrinkled, slimy caps.

For oyster mushrooms

  • You should choose oyster mushrooms that have natural colors like white or gray, not too dark or too light.
  • At the same time, you should also choose mushrooms that are intact and have a fragrance similar to almonds, not bruised or smelling rancid.

How to prepare Seaweed Noodles

  • Prepare the ingredients

    Remove the stems from the shiitake and oyster mushrooms, then soak them in diluted salt water for 15 minutes, rinse thoroughly with water, and let them drain. For larger mushrooms, cut them into smaller pieces for easy eating.

    Peel the onion, carrot, pineapple, and cassava. Then, cut the carrot and cassava into round slices. Cut the onion in half.

    Cut the tomato and pineapple into wedges. For the seaweed, place it in a bowl of cold water and soak for 20 – 30 minutes until it fully expands.

  • Make the broth sweet

    You put a pot with 1.5 liters of water on the stove, then gradually add 1 onion, 8 coriander roots, 1 carrot, 1/4 ripe pineapple, 1 cassava root, and 10 grams of seaweed, and cook for 15 minutes before removing the ingredients.

  • Fry the seaweed leaves

    You mix 100 grams of crispy frying flour and 1/3 teaspoon of salt with 80 ml of water.

    You dip the seaweed leaves in the flour, then fry them in hot oil until the bottom side is golden, then remove.

  • Stir-frying mushrooms

    Heat oil in a pan and sauté with a little onion until fragrant, then add tomatoes and pineapple and stir well.

    Wait for the tomatoes to soften, then add 80 grams of oyster mushrooms and 10 grams of shiitake mushrooms, stir-fry until cooked, and season with 1 teaspoon of salt.

  • Broth

    Add the stir-fried filling to the pot of vegetable broth. Wait for it to boil, then add 2 grams of wakame seaweed, 2 tablespoons of vegetarian seasoning, 1 tablespoon of sugar, and 1 teaspoon of salt.

    Cook for another 5 minutes and then turn off the heat.

    You arrange the noodles and seaweed in a bowl, add hot broth, and enjoy!
