Tips for Choosing Delicious Ingredients for Soup
Selecting Good Corn:
- You should choose fresh corn with an outer husk that is green and not dried out, the corn silk should still be soft and smooth, and the husk must tightly wrap around the cob. The kernels should be plump, uniform, shiny, and straight, without any signs of worms. Avoid choosing overly large cobs; opt for moderately long and slender ones.
How to Choose Good Potatoes:
- Choose potatoes that are yellow in color; do not select white ones as they lack sweetness and have fewer nutrients.
- Do not choose potatoes that have sprouted, or have skin that has turned green, as these are very toxic and harmful to health.
- It’s best to buy potatoes that feel firm, heavy, have smooth skin, are intact, with no spots, worms, or black eyes on the skin, and are not rotten or leaking.
- Avoid buying potatoes with wrinkled skin or that feel soft when pressed; most of these are old, withered, and lack nutrients, leading to a bland taste.
- Do not buy scratched potatoes, as these can spoil quickly if not eaten right away, and they can also cause nearby healthy potatoes to spoil and become inedible.
- Choose potatoes without deep dents to make preparation before cooking quicker and easier.
Selecting Good Chayote:
- Choose fresh chayote that is not bruised or has puncture marks…
- Opt for chayote with fewer ridges, as they will be quicker to peel.
- Select smooth chayote, preferably young ones with shiny skin. If it feels soft and easily indents, it’s a young fruit; if it feels hard and somewhat tough to pierce with your fingernail, it is an older chayote.
How to make Mixed Vegetarian Soup

Prepare the ingredients
Peel the chayote, wash it clean, then cut it in half to remove the seed, and cut it into pieces. Clean the mushrooms and cut them into pieces. Wash the mustard greens and cut them into thin slices.
Cut the mushrooms into pieces about 1 cm thick. Peel the carrot, cut it into pieces or slice it thickly at 1 cm.
Peel the potato, soak it in diluted salt water for about 5 minutes to reduce the sap, wash it clean again, and cut it into large cubes.
Cut the corn into bite-sized pieces.
Tip:
- Do not wash the mustard greens too carefully, and there is no need to soak them in water to avoid losing the salty flavor of the greens.
- When peeling the chayote, run water while peeling so the chayote will not stick sap to your hands.

Cook the soup
Put about 1 liter of water in a pot on the stove, turn on medium heat. When the water boils, add the mustard greens first, then add the mushrooms and corn, and cook until the water simmers gently.
After about 10 minutes, add the potatoes, carrots, and chopped chayote into the pot. Turn up the heat and cook for about 15 – 20 minutes for the ingredients to cook evenly and release sweetness.
Add 2 teaspoons of vegetarian seasoning to enhance the flavor of the soup.
Tip for you: Add the carrots, potatoes, and chayote last to prevent these ingredients from overcooking, becoming mushy, and tasting bad.
