Ingredients for Vegetarian Meatball Porridge For 4 people

Rice 1/2 cup (Rice bowl) Straw mushrooms 250 gr Tofu skin 150 gr (fresh tofu skin) White tofu 100 gr Bean sprouts/ green onions A little Vegetarian seasoning 2 teaspoons Vegetarian fish sauce 1 tablespoon Cooking oil 2 tablespoons Common spices A little (Salt/ sugar/ ground pepper)

  • Fresh straw mushrooms are those that are still in bud form, round or cylindrical; when gently squeezed, they feel slightly firm, indicating fresh mushrooms that are sweeter and more aromatic when eaten.
  • To make the dish visually appealing, you should choose straw mushrooms that are uniform in size.
  • Black or gray straw mushrooms will taste better than the white ones; good mushrooms will have bright colors.
  • Do not choose mushrooms that smell bad, have dull colors, feel soft and mushy when touched, or are overly large, as these mushrooms have been stored for too long and will not taste good.

How to choose fresh and delicious tofu

  • You should choose pieces of tofu that have a natural white color, with a light aroma of soybeans when smelled.
  • Good tofu does not contain gypsum; when touched, you can feel the softness and smoothness of the piece, so you should pay attention.
  • You should not buy pieces of tofu that have a pure, eye-catching white color, and when smelled, there is either no scent or a very strong soybean smell; this could be tofu mixed with impurities.
  • Tofu that contains gypsum usually has a hardness and is not soft and smooth; you can feel this immediately when touched.

How to choose delicious tofu skin

  • You should choose pieces of tofu skin that have an ivory white color; when smelled, you can still sense a light, characteristic aroma of soybeans.
  • When touching a piece of tofu skin, you should still feel a certain softness, not too hard.
  • Do not choose fresh pieces of tofu skin that are a deep yellow color, as they may be tofu skin treated with chemicals.

How to prepare Vegetarian Meatball Porridge

  • Roasting rice and cooking porridge

    Put 1/2 cup of rice (rice bowl) into a pan, roast evenly over medium heat until the rice is fragrant and golden. Then, rinse the rice thoroughly.

    Add about 1 liter of water into a pot, bring the water to a boil and add the washed roasted rice, cook on low heat until the porridge is soft.

  • Prepare other ingredients

    Boil 300ml of water, adding 1/2 teaspoon of salt. When the water boils, add the tofu skin and tofu, boiling on high heat for about 5 minutes. Then remove everything and squeeze out the excess water.

    Clean the straw mushrooms by removing any straw or dirt stuck to the stems, then soak them in diluted salt water for about 5 minutes and rinse with clean water.

    Trim the chives by removing any damaged leaves and cutting off the roots, then wash the chives and bean sprouts thoroughly and let them drain. After that, chop the chive leaves finely while cutting the white parts into sections.

  • Mixing and Shaping the Meatballs

    Add the dried tofu skin and white tofu into bowl, add 1/2 of the chopped scallions, 1/2 teaspoon of sugar, 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of pepper, and mix well. Marinate for about 15 minutes.

    Take a small piece of dried tofu skin, add a bit of white tofu, roll it up, and then use plastic wrap to shape the vegetarian meatballs into rounds.

    Depending on your preference, you can make the meatballs big, small, or in different shapes. Repeat the process until all ingredients are used up.

  • Boiling the Meatballs

    Bring the meatballs to boil over medium heat for about 5 minutes or steam them for about 20 minutes. Then take the meatballs out and remove the plastic wrap.

  • Complete the porridge

    When the porridge has puffed up, add the straw mushrooms, cook for another 10 minutes on low heat, and season with: 1 teaspoon of sugar, 1 teaspoon of vegetarian seasoning, 1/2 teaspoon of ground pepper, 1 tablespoon of vegetarian fish sauce. Stir well to combine the seasonings into the porridge.

    Add the meatballs, cook for another 5 minutes, taste and adjust the seasoning to suit your family’s preference, then turn off the heat and add the chopped green onions.

    In a pan, add 2 tablespoons of cooking oil, heat the oil, then add the finely chopped green onions, sauté until fragrant, then turn off the stove. Pour the mixture of scallion oil into the pot of porridge, stir well, and it is ready to enjoy.
