How to choose fresh pig hearts
- You should choose hearts that are relatively sized, not too large but also not too small.
- Fresh pig hearts usually have a dark red color, shiny and soft on the outside. When touched, they should have some elasticity. Pressing on the heart will release a bright pink fluid, with no slimy texture or foul smell.
How to choose fresh pig livers
- You should choose livers that are dark purple-red or slightly purple, with a shiny surface, soft and smooth to the touch, and pressing down should leave an imprint.
- You should not choose livers that are usually colored from fresh brick red to yellow or silver with white spots, as these indicate sick pigs.

How to choose fresh pig kidneys
- You should buy kidneys when you see the entire pig kidney has a dark red color, evenly colored.
- Choose kidneys that feel firm when held, with no strange smell.
- Pressing on the kidney should still allow you to feel its elasticity and the outer membrane should be intact.
- Do not buy kidneys that feel soft or mushy.
- Avoid buying kidneys that have white spots or bruises.
How to choose fresh straw mushrooms
- When buying fresh straw mushrooms, you need to pay attention to buy those that are whole and have a characteristic fragrant smell.
- Fresh and delicious straw mushrooms are round and still have their caps. The caps are large, and the stems are short.
- Straw mushrooms with a black color usually have a richer flavor and are more fragrant than the white ones.
- You should not choose mushrooms that have already bloomed widely, are bruised, or have a strange smell.
How to make Tieu porridge

Prepare the pig’s offal
The heart, liver, and kidneys should be washed clean with water and then rubbed with salt. After that, rinse and cut into small pieces.
To eliminate the fishy smell of the pig’s offal, place the offal in a large bowl, add flour (or rice flour), and mix well for the flour to absorb for 15 minutes, then rinse clean again.
How to clean pig’s offal, odor-free
- Evenly rub salt over the entire offal, wait for 2 – 3 minutes, then rinse clean. Repeat this a few times and soak in cold water to eliminate the bad smell.
- Next, mix diluted vinegar water, put the pig’s offal in and massage well, then rinse several times with water.
- To make the offal even cleaner, mix a little white wine into the water, massage the entire mixture thoroughly, then rinse again to effectively clean and eliminate the fishy smell.

Mix rice and cook bones
Put sticky rice and glutinous rice into the pot along with 1/2 tablespoon of cooking oil, mix well so that the oil absorbs into the rice.
Continue to add pork bones, pour about 2.5 liters of water and simmer on low heat for about 20 minutes.

Marinate pork
Marinate minced pork with chopped green onions, 1.5 teaspoons of seasoning powder, 1/3 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1/2 tablespoon of cooking oil, 1/3 teaspoon of pepper, 1 teaspoon of fried onion, mix well for the meat to absorb the spices, then shape into meatballs.

Prepare other ingredients
Straw mushrooms should be washed clean and cut in half. To keep the straw mushrooms clean and white, prepare a basin of water mixed with 1 teaspoon of salt, and soak the straw mushrooms for about 10 minutes.
Peel the ginger, then cut it in half, with a small part of the ginger sliced. Chop 2 shallots finely. Wash the green onions and then chop them small.

Boil the meat
Add the heart, liver, 4 shallots, and ginger into the pot of porridge, season with 1 teaspoon of salt, 2 teaspoons of seasoning powder, stir well, and simmer for about 10 minutes.
Add the pig kidneys to the pot and simmer for 7 minutes. Then remove the heart, liver, and pig kidneys and place them in a basin of cold water, then slice them. Continue to simmer the porridge on low heat.
Tip: You can boil the ingredients separately and add them to the porridge when eating to keep the porridge clear and more beautiful.

Stir-frying mushrooms
Place a pan on the stove and add 1 tablespoon of cooking oil. When the oil is hot, add the shallots and sauté until fragrant, then add the mushrooms and stir-fry, seasoning with 1 teaspoon of seasoning powder and stir-fry for about 2 – 3 minutes until the mushrooms are cooked.

Completion
Add the meatballs, stir-fried mushrooms, and season with 2 tablespoons of seasoning powder, 1/2 teaspoon of salt, and 1/3 teaspoon of monosodium glutamate into the pot of porridge, stir well and then turn off the heat.
Add bean sprouts, sliced meat, a bit of sliced ginger, and chopped green onions into a bowl, then ladle the porridge in, sprinkle some pepper, and it’s complete.
