  • You should choose lotus roots with medium-sized, short segments; the distance between the segments should be long as this indicates a lotus root that is just ripe and will have a delicious flavor.

How to make Lotus Root Rib Soup

  • Prepare and marinate the short ribs

    To remove the smell and clean the short ribs, soak them in diluted salt water for about 5 minutes, then rinse with water twice and let drain.

    Use a knife to chop the ribs into bite-sized pieces, about 2 finger lengths. Peel the shallots and chop them finely.

    Marinate the ribs with half of the shallots, 2 teaspoons of seasoning, 1 teaspoon of pepper, and 2 teaspoons of fish sauce. Mix well and let marinate for 15 minutes to absorb the flavors.
