How to choose fresh, delicious ingredients
How to choose fresh tender ribs
- Choose tender ribs that are light pink in color, press and feel springy, and have no unpleasant smell.
- Opt for ribs with flat and small bones. This type of rib has more meat and less bone compared to larger ribs.
- Avoid ribs that smell bad, have a pale green color, are slimy, and lack springiness when pressed.
How to choose delicious lotus root
- You should choose lotus roots with medium-sized, short segments; the distance between the segments should be long as this indicates a lotus root that is just ripe and will have a delicious flavor.
- Select lotus roots without bumps on the surface, usually yellow in color, and without strange odors.
- Do not buy lotus roots with overly white skin, as this indicates chemically treated lotus roots.
