How to choose and buy ingredients:
Indian spices such as garam masala powder, coriander seeds, and curry powder are not commonly sold in stores today. You can find them in online stores that specialize in Indian spices.
Chickpeas are available on e-commerce websites; you can look to buy them.
Coconut milk:
You can buy it ready-made at markets or grocery stores and supermarkets. However, you can make it yourself by following these steps:
- Boil coconut water, cut the coconut meat into small pieces. Put the coconut meat into a blender with the boiled coconut water, and blend the mixture until it is very smooth.
- Use a strainer or a sieve to filter the blended coconut mixture, extracting the coconut milk.

How to make Indian Vegetarian Curry

Prepare the ingredients
Cut the cauliflower into small florets. Cut the sweet potato into bite-sized pieces. Peel and chop the onion. Peel the carrot, cut it into bite-sized pieces, and slice the bell pepper lengthwise.
Prepare 3 separate baking trays: place the cauliflower in one tray, the sweet potato in the second tray, and the bell peppers, onion, carrot, and garlic in the last tray. Add 1/2 teaspoon of salt to each tray and roast for 30 minutes until the vegetables are cooked.
While waiting for the vegetables to roast, add all the prepared spice ingredients into a large non-stick pan over medium to low heat for 1-2 minutes, stirring well until the spices become fragrant.

Blend the curry sauce
Remove the roasted vegetables from the oven, add the sautéed spices, roasted carrot, bell pepper, onion, garlic, shredded coconut, almond flour, coconut milk, and tomato sauce into a blender and blend until smooth.

Cooking curry
Add 1/2 tablespoon of cooking oil to the pan, add the broccoli to the pan, then add the chickpeas and roasted sweet potatoes. Pour the freshly blended curry sauce into the pan and stir well, then simmer on low heat for 3-5 minutes. Taste and add salt or tamari if needed, and sprinkle the chopped cilantro on top.
