  • Choose oysters that have tightly closed shells to ensure there is plenty of meat inside.
  • To check the oyster meat, open the shell; if the meat clings tightly and fills the shell, it is fat and tastier.
  • You can find whole oysters at the market or buy oyster meat at supermarkets.
  • Avoid buying pre-shucked oysters that have an unusual smell or are slimy.

How to choose fresh and delicious dọc mùng (water morning glory)

  • When buying, you should choose dọc mùng that are of moderate size, not too big and not too small.
  • Additionally, you should choose those that have a red spot in the middle of the leaf stem. If the spot is white, it may cause itching when eaten.
  • Do not buy dọc mùng that has been peeled, pre-cut, and shows bruises or blemishes on the cut.

  • Prepare the ingredients

    Wash the fresh oyster meat with diluted salt water and then drain.

    For dọc mùng, use a knife to peel the skin, slice it, place it in a bowl, and massage it with coarse salt, then rinse thoroughly with water and let it drain.

    After washing, cut the Vietnamese coriander and perilla leaves into small pieces.

    Wash the tomatoes and cut them into wedges. Peel the shallots and slice them.

    Tip: To avoid breaking the oyster meat, you need to wash it very gently!

  • Sautéed Oyster Interior

    You place a pot on the stove, add 2 spoons of cooking oil along with sliced shallots, and sauté evenly over medium heat until the shallots become fragrant.

    Next, add the diced tomatoes and stir until the tomatoes soften, then add the oysters and stir with 1 tablespoon of seasoning, cooking for about 3 minutes before adding 500ml of filtered water.

  • Cooking Oyster Soup with Water Spinach

    After adding 500ml of filtered water to the pot, boil the water for about 3 minutes before adding the water spinach. Cook for an additional 2 minutes, then add 1 tablespoon of fish sauce, 1/2 tablespoon of sugar, along with chopped Vietnamese mint and perilla leaves.

    After cooking for about another minute, turn off the heat and add 1/2 teaspoon of seasoning, stirring well to finish. You can adjust the amount of seasoning to suit your taste.
