How to choose fresh ingredients
How to choose fresh, sweet oysters
- You should choose oysters with a conical shell that is tightly closed, which indicates that the meat inside will be more abundant and tastier. Alternatively, you can choose short, slightly round or oval-shaped oysters with a shell that bulges slightly.
- You can knock on the oyster shell; if you do not hear any sound from inside, it means the oyster is dead or no longer fresh.
- If purchasing shucked oysters, pay attention to the meat, which should be pale white, fresh, and not slimy or discolored.
- It is advisable to choose reputable places to buy fresh oysters to avoid purchasing stale ones. For packaged oysters, select those that are carefully packed, with clear production origins, production dates, and expiration dates.
How to choose quality pork belly
- When buying pork belly, observe that the meat has a light red or bright pink color, and the outer layer is dry, which indicates good quality meat. When cut with a knife, the meat should appear bright pink, with the fat layer interspersed being bright white and firm.
- Pork belly is a delicious cut, but you should choose the part with a balanced ratio of lean meat and fat to avoid being greasy. In particular, the texture of the meat must be firm, and the fat should be tightly attached to the lean meat, not loose.
- Fresh and delicious meat usually has high elasticity. When you press it with your hand and then release, it should not leave a dent.
- Do not buy pork belly if you smell a sour or any strange odor, as it indicates that the meat is spoiled or has been stored for too long.
How to make Oyster Kimchi Soup
-
Prepare the ingredients
If you buy oysters with shells, proceed to open the shells to take out the oyster meat. Place the live oysters in a bowl or sieve, then boil water to blanch the oysters and let them drain.
Wash the pork belly with salted water, and use a knife to cut it into bite-sized cubes. Squeeze the kimchi to remove excess water to reduce saltiness.
Cut the tofu into squares depending on your family’s preference. Wash the green onions, and chop them finely.

Sauté ingredients
You heat a pan on the stove, add 1 teaspoon of cooking oil and wait for the oil to heat up. Then add the oysters and stir-fry until cooked, adding about 1/4 teaspoon of salt, stir-fry for another 30 seconds and then transfer to a plate.
In the same pan, add 1 teaspoon of cooking oil and sauté the onions until golden. Next, add the pork belly and stir-fry until cooked, about 2 minutes, then transfer to a plate.
Using the same pan, sauté the onions and then add the drained kimchi, stir-frying for about 3 minutes before turning off the stove.
