Prepare the mackerel
Use scissors or a knife to cut off the fins of the mackerel, remove the intestines, and then reduce the fishy smell by rinsing the mackerel with diluted salt water. Next, rinse with clean water and place it in a basket to drain.

Prepare other ingredients
Shallots and garlic peeled, roots cut off, chilies trimmed, washed clean then chopped finely. Green onions and coriander, cut off the roots and yellow leaves, then washed and chopped small.

Fry the mackerel
Place a pan on the stove, add 4 spoons of cooking oil to the pan, wait for the oil to heat up, then add the mackerel to fry over medium heat. Fry each side of the fish for about 3 – 5 minutes before flipping. Fry until the mackerel is cooked, fragrant, and turns golden, then turn off the stove and drain the oil.

Reuse the pan and the oil used for frying the fish earlier to make the tomato sauce. Turn on medium heat, wait for the oil to heat up again, then add the chopped shallots, garlic, and chili into the pan to sauté until fragrant.
Use chopsticks to stir evenly until the mixture is fragrant and golden, then add all the diced tomatoes and stir-fry for about 3 minutes.
Then season the mixture with: 1 teaspoon of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of oyster sauce, 1 teaspoon of soy sauce, 1/2 teaspoon of monosodium glutamate, and 2 tablespoons of fish sauce.
Add 2/3 bowl of filtered water (rice bowl) into the pan and stir well to dissolve all the seasonings. Next, reduce the heat to simmer the tomato sauce mixture until slightly thickened, then taste and adjust the seasoning to your liking.

When the tomato sauce mixture thickens, add all the fried mackerel into the pan. Use a spoon to evenly pour the tomato sauce over the surface of the fish. Cook for another 2 minutes for the fish to absorb the sauce, then turn off the heat.
