How to choose fresh and delicious pineapples

  • The more evenly yellow the pineapple is, the tastier it will be. Therefore, you should choose pineapples that have a bright yellow color, and the fewer green eyes there are, the sweeter the pineapple will be. Do not choose pineapples that are too green because they will be sour. Also, avoid overripe pineapples as they may have rotted.
  • You should choose round-shaped pineapples as they will have more flesh than elongated ones. A good pineapple feels firm in hand and emits an attractive aroma.
  • The further apart the eyes of the pineapple are, the older and tastier the pineapple is.

How to prepare Shrimp Water Spinach Soup

  • Prepare the ingredients

After buying the shrimp, peel off the shell, remove the sand vein on the back, and leave the meat part intact.

Wash the shrimp thoroughly, then use a knife to lightly crush the shrimp and set it aside on a plate. Add 1 teaspoon of fish sauce and 1 teaspoon of seasoning powder, marinate the shrimp for about 5 minutes.

Quick way to remove shrimp sand vein

    • Method 1: Proceed to peel the shrimp and then take out the sand vein on the back.
    • Method 2: Count backward from the tail of the shrimp to the second groove connecting the two shell segments, pierce a toothpick through and pull to remove the sand vein.
    • Method 3: Hold the shrimp upside down, with one hand holding the head and the other holding the back of the shrimp. Next, gently bend the shrimp’s head and squeeze lightly from bottom to top to push the intestine out. Hold the intestine and gently pull the sand vein out of the shrimp’s body.

Peel the pineapple, remove the eyes, and cut it in half. Use half of the fruit to prepare the dish, slicing it diagonally into pieces about 0.5 cm thick.

Quick way to peel pineapple without cutting out the eyes

    • Method 1: Cut off both ends of the pineapple and then cut it in half lengthwise. Place the pineapple flesh side down on the cutting board and use a knife to closely peel the skin, ensuring to remove the eyes as well.
    • Method 2: Cut the pineapple into 4 equal parts along the length of the fruit. Then, use one hand to hold the piece of pineapple steady while the other hand uses a knife to separate the flesh from the skin, removing the eyes in the process.

After the shrimp is cooked, add about 900ml of water into the pot and bring it to a boil over high heat.

When the soup is boiling, let it simmer for another minute to allow the sweetness of the shrimp and pineapple to infuse into the water, then add 1 teaspoon of fish sauce and 1 teaspoon of seasoning powder and stir well.

Tip: For sour dishes, you should use fish sauce instead of salt because fish sauce will enhance the sour flavor.

Next, turn off the stove and pour the soup into a bowl. Finally, we will add the coriander on top of the soup.

How to choose and where to buy fresh and delicious ginseng leaves

  • You should choose clusters of ginseng leaves that are bright green, with a smooth and cool surface, a characteristic fragrant smell, and no yellow or curled, wilted, or pest-infested leaves.
  • Avoid buying clusters of leaves that are too old because they will taste bitter and dry when eaten. Old ginseng leaves will have a yellowish-green color, and when touched, the leaves easily fall off the branch.
  • Avoid clusters of leaves that have strange smells or unusual spots on the leaves as they may have been sprayed with pesticides, making them unsafe to eat.
  • You can buy ginseng leaves at stalls in the market or at some stores selling herbal leaves.
