How to choose fresh ingredients
How to choose fresh short ribs
- Choose ribs that are bright pink, firm to the touch, and have good elasticity.
- Opt for ribs with flat, small bones as these types have more meat and less bone than larger ribs.
- Avoid ribs that are pale green, mushy, leaking slimy fluid, or have an unusual odor.
How to choose fresh white radish
- It is best to buy medium-sized white radishes that taper towards the tail. Radishes with a thick tail usually have a bland taste.
- Choose white radishes that still have their leaves and roots; select those with fresh, vibrant leaves, as these are freshly harvested radishes.
- Avoid white radishes with rotten leaves, even if the skin is still smooth and shiny, as these have been injected with preservatives.
How to choose fresh carrots
- Choose carrots that are of moderate size, not too large, with a slender shape that feels firm in your hand.
- Fresh carrots should be bright orange and shiny, with smooth skin, not rough, and the green tops should be vibrant and firmly attached to the body.
- Avoid carrots with wilted tops, slimy to the touch, soft flesh, and many dark spots on the surface, as these indicate old carrots that may affect health.
How to choose fresh and delicious napa cabbage
- Fresh napa cabbage has a light green color at the tip and gradually turns bright white from the stem to the root.
- It is recommended to choose napa cabbages that are bright white, with firm stalks and tightly curled leaves.
- Avoid selecting cabbages that are bruised or have dark spots on the leaves.
- Do not choose napa cabbage stalks that are dark green, as these are older, not sweet and crunchy, and have lower nutritional value compared to firmer stalks.

Prepare the other ingredients
Wash the carrots and white radish, peel them, and cut them into bite-sized pieces. Cut the napa cabbage into pieces about the length of a finger, separating the stems and leaves.
Peel the shallots, take about 6 – 7 bulbs and slice them thinly, leaving the remaining bulbs whole.
Wash the cilantro, remove the roots and wilted leaves, and cut them into bite-sized pieces. Wash the bean sprouts and let them drain.
Wash the green onions, remove the roots, cut them in half to keep the white part separate, and cut the green tops into bite-sized pieces.

Make the broth
Place a pot on the stove. Add 3 tablespoons of cooking oil and heat it up.
Add sliced onions and sauté until fragrant. When the aroma wafts out, add about 1.5 liters of water (about 1.5 bowls of water) and bring it to a boil.
Add the ribs and reduce the heat. Add 1/2 tablespoon of salt, 1 tablespoon of seasoning powder, 1 tablespoon of sugar, and 1 teaspoon of monosodium glutamate. To keep the broth clear and delicious, remember to skim off the foam.
Cook the ribs for about 7 – 10 minutes, then add the radish and carrot and cook for another 25 minutes.
Next, add the green onion stalks and 3 shallots. Cook for another 2 minutes, then add the cabbage stems, turn up the heat to medium, and cook for 3 – 4 minutes until tender, then add the cabbage leaves and cook for an additional 2 minutes.
Finally, sprinkle 1 teaspoon of ground pepper on top, add green onions, coriander, and fried onions, and turn off the heat.
