Ingredients for Zaru Soba Noodles For 2 people

Dried soba noodles 397 gr Dried bonito flakes 160 gr Soy sauce 120 ml Mirin 120 ml Sake 60 ml Seaweed 1 piece Green onions 2 stalks Wasabi A little

What is Zaru Soba?

  • Zaru soba is made from buckwheat flour with thin, light noodles similar to Italian spaghetti, served with soy sauce.
  • This dish has a unique flavor and contains many nutrients that are good for the body.
  • This noodle dish can be eaten in various ways, either hot or cold.
  • This is a quite popular noodle dish favored in the land of cherry blossoms. It is commonly served in upscale restaurants or can be found in convenience stores.

How to prepare Zaru Soba noodles

  • Prepare the ingredients

    Green onions should be washed clean and chopped finely. For the wasabi, chop it finely and put everything into a bowl.

  • Make the dipping sauce

    First, prepare a small pan. Add 60ml of sake and heat it over high heat to evaporate the alcohol.

    Next, add 120ml of soy sauce, 120ml of mirin, a piece of kombu, and 160g of dried bonito flakes, then simmer the mixture over low heat for about 5 minutes.

    When done, turn off the heat and let it cool completely. Prepare a strainer and filter the mixture into a bowl.

  • Blanch the noodles

    You place a pot of water on the stove and bring it to a boil over medium heat. When the water is boiling, add the soba noodles and cook for about 10 minutes until the noodles are cooked and soft.

    Tip:

    • To separate the noodles, you should add them in a clockwise direction.
    • Depending on the brand of soba noodles, the cooking time may vary.
    • During cooking, stir regularly to prevent the noodles from sticking together.

    After cooking, drain the soba noodles in a colander and rinse them under cold running water to remove the starch. Shake the colander to completely remove the water from the noodles, then place them in a bowl of ice water. Once the noodles are cool, remove them.

    Use a bamboo strainer and place it on a plate. Next, add the noodles on top and sprinkle a little green onion, serving with the prepared soy sauce.

    Now you can enjoy your dish.
