How to prepare Zaru Soba noodles

Prepare the ingredients
Green onions should be washed clean and chopped finely. For the wasabi, chop it finely and put everything into a bowl.

Make the dipping sauce
First, prepare a small pan. Add 60ml of sake and heat it over high heat to evaporate the alcohol.
Next, add 120ml of soy sauce, 120ml of mirin, a piece of kombu, and 160g of dried bonito flakes, then simmer the mixture over low heat for about 5 minutes.
When done, turn off the heat and let it cool completely. Prepare a strainer and filter the mixture into a bowl.

Blanch the noodles
You place a pot of water on the stove and bring it to a boil over medium heat. When the water is boiling, add the soba noodles and cook for about 10 minutes until the noodles are cooked and soft.
