Prepare the ingredients
Clean the catfish by removing the scales, gills, and intestines, then eliminate the fishy smell by soaking the fish in diluted saltwater for about 10 minutes, then remove and rinse with clean water.

Make the spice mixture and marinate the fish
Put 2 shallots, 3 cloves of garlic, 2 fresh chili peppers, 1 tablespoon of sugar, and 1 teaspoon of salt into a mortar and pound them finely.
Put the fish into a large bowl, add the ground spices along with 1 tablespoon of fish sauce, 2 teaspoons of ground pepper, and 2 teaspoons of seasoning powder, and mix well.
Marinate the fish for about 1 hour so that it absorbs the spices, which will make it tastier when stewed.

Fish Stew
