Note: When cooking this bamboo shoot soup with dried bamboo shoots and pork leg, remember to soak the dried bamboo shoots in water for about 3 days and change the water daily before proceeding to cook!
How to Prepare Bamboo Shoot Soup with Dried Bamboo Shoots and Pork Leg

Soak the dried bamboo shoots
You take the dried bamboo shoots and soak them in water for 3 days, replacing the water daily. On the last day, take the bamboo shoots out and soak them in rice water for 3 – 4 hours.

Preparation of bamboo shoots
Take the soaked bamboo shoots out and boil them until cooked. Then, you take the bamboo shoots out and tear them into bite-sized pieces.
Next, you marinate the bamboo shoots with ½ tablespoon of seasoning, ½ tablespoon of monosodium glutamate, mix well and let it sit for 30 minutes to absorb the seasoning.
Finally, you place the bamboo shoots in a pan and stir-fry with shallots and fragrant oil until the bamboo shoots are firm.

Preparation of pork knuckle
You proceed to chop the pork knuckle and ribs into small pieces and put them in a pot of boiling water to wash the bones. After that, you take the knuckle out and wash it under cold running water to remove any bone fragments.
Next, you put the knuckle into the pot and add some seasoning to stir-fry until fragrant.

Cooking dried bamboo shoot soup
You pour enough water to cover the meat, turn the heat to low and simmer until the bones are soft, then you add the sautéed bamboo shoots into the pot with the meat and boil for an additional 10 – 15 minutes.
You should also season with a tablespoon of fish sauce to enhance the flavor of the soup.
