Prepare the ingredients
You should carefully prepare the duck meat to remove its odor and fishy smell, cut the duck into bite-sized pieces or alternatively, you can separate the duck meat from the bones. Slice the meat into thin pieces.
Marinate the duck meat with 2 teaspoons of fish sauce, 1 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder, along with 1/2 chopped onion and minced garlic. Stir well so that the duck meat absorbs all the spices and marinate for about 30 minutes.
Clean the remaining ingredients. Among them, crush and finely chop the fresh lemongrass, cut the potatoes into four pieces, chop the carrots into approximately 3cm pieces, cut the onion into wedges, and slice the sweet potatoes into about 2cm rounds.
Grate the dried coconut into small strands. Soak everything in a bowl of hot water for about 20 minutes. Use your hands to squeeze out all the liquid, keeping the water and discarding the residue.

Cooking duck lagu
You place a pan on the stove, add cooking oil and heat it up. Gradually add potatoes and sweet potatoes to fry until golden brown on both sides, then remove them.
Continue by placing the pan back on the stove, adding cooking oil and frying garlic and onions until fragrant. Add the marinated duck meat and stir-fry until cooked. Then, add enough water to cover the meat and simmer on low heat until tender.
Add coconut milk to the pot and boil for about 15-20 minutes, then add the sweet potatoes, potatoes, carrots, and onions. Season with spices to taste and cook for another 15 minutes, then add curry powder and stir well.
Add tapioca starch to the pot and stir continuously until the sauce thickens, then turn off the heat.

Duck odor removal tips: Clean the duck with water, rub the entire duck with salt and crushed fresh ginger. Then use a mixture of white wine and vinegar to apply both inside and outside of the duck. Let it sit for about 15 minutes to absorb, then rinse with cold water.
Note when cooking: You should put the tapioca starch in a small bowl and dissolve it with cold water. Gradually pour it into the pot with the duck while stirring gently until the mixture thickens, doing this to avoid clumping of the tapioca starch.
