How to choose fresh delicious duck meat
Live ducks
- It is advisable to buy ducks that are fully grown, with a full breast as they usually have more meat.
- Choose ducks that are fully feathered and not molting. Ducks with shiny feathers indicate good health.
Processed ducks
- It is best to choose ducks that have just been slaughtered, with evenly yellow skin, light color, and without ulcers or bruises on the skin.
- Pressing with your hand, if it has good elasticity, it means the duck is fresh; those that are sunken when touched are either water-inflated ducks or the meat is no longer fresh.
How to prepare Duck Noodle Soup with Pepper

Prepare the duck meat
Clean the duck meat you bought inside and out with diluted salt water.
Effective ways to remove the smell of duck:- Use alcohol and sliced ginger, crushed to wash the duck one more time, ensuring the duck is truly clean and free of odors. Rinse again with water and let it drain.
- You can also use salt with vinegar/lemon to scrub the duck, which is another very effective way to remove the smell.
Cut the duck into bite-sized pieces about 2 finger lengths.
For the duck liver, wash it clean and chop it finely, then put it into a bowl.

Marinate the duck
Marinate the duck with 1 teaspoon of pepper, 1 tablespoon of fish sauce, 1 tablespoon of sugar, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, 1 tablespoon of minced garlic and shallots, and 1 tablespoon of satay.
Mix well for the spices to soak into the duck and marinate for 30 minutes.

Cook the pepper broth
Place a pan on the stove and roast 50g of black pepper until you hear it popping. Then crush this pepper along with 30g of green pepper.
Roast 2 shallots until fragrant and then peel them.
Add 2 liters of water to a pot and place it on the stove. Add the roasted shallots along with the crushed green and black pepper into the pot, and bring to a boil.

Stir-fry the duck meat and liver
Place a pan on the stove, add 1 tablespoon of cooking oil, and sauté 1 tablespoon of garlic and shallots until fragrant. Then add the marinated meat from earlier and stir-fry until it is well-seared.
Tip: Stir-frying the duck meat helps it to be firmer, renders fat, and enhances the flavor of the meat when enjoyed.Heat another pan and sauté 1 tablespoon of minced onion and garlic similarly. Then add the finely chopped liver and stir-fry. You can add 1 teaspoon of seasoning to enhance the flavor of the liver.

Cooking the Duck
After stir-frying, add the duck to the pot of pepper water to cook. When you see the water boiling, add the stir-fried liver to cook as well. Season the broth with 1 teaspoon of seasoning, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 tablespoon of fish sauce.
Be sure to skim off the foam to keep the broth clear and cook for about another 30 minutes.
When you are about to serve, add in 1 onion cut into wedges to finish.

Making sweet and sour red onion
Wash, peel, and slice 5 bulbs of red onion thinly.
Mix 3 tablespoons of vinegar and 1 tablespoon of sugar evenly, add to the red onion and soak for 15 minutes.

Final product
This duck noodle dish is served with pickled red onion, a little shredded water spinach, banana flower, bean sprouts,… which enhances its deliciousness.
