How to choose fresh river crabs

  • To select good crabs, observe and choose those with a dull gray-purple color, choose ones with a small and pointed apron for more meat, and choose crabs with a large apron as they contain more roe.
  • Gently press on the apron shell, select those that show bubbles.
  • Do not choose crabs that are missing legs, are inactive, have unusual colors, or have a foul smell.
  • You can buy fresh crabs to grind at home or buy pre-ground river crabs.

How to choose fresh mustard greens

  • To select good mustard greens, observe and choose stalks with large, green, and thin leaves, thick stalks, and a natural fragrant smell.
  • Do not choose mustard greens with yellow leaves, bruises, worm-eaten stalks, rough and spotted, or have a chemical smell.

How to Make Crab Soup with Mustard Greens

  • Extract Crab Meat and Filter Crab Stock

    If you are using fresh river crabs, after purchasing, use a small brush to scrub the dirt off the crab’s body, then rinse thoroughly.

    Open the crab’s shell to extract the meat, then use scissors to cut the crab into small pieces for easier blending. Put the crab into a blender and blend until smooth.

    Transfer the blended crab into a bowl, add water up to about half the bowl, then use your hands to gently squeeze the crab mixture and strain the liquid, making sure not to include the shells. Gradually add more water and repeat until you have enough liquid to cook the soup.

  • Prepare Mustard Greens

    After purchasing, cut off the roots of the mustard greens, soak them in diluted salt water for about 5 minutes, then rinse with clean water and let them drain.

    Cut the mustard greens into small pieces, about the length of one finger joint.

  • Stir-fry the crab meat and cook the crab soup

    Place a pot on the stove, heat 1 tablespoon of cooking oil, when the oil is hot, add 1 tablespoon of sliced shallots to fry until fragrant.

    When the shallots are aromatic, add the crab meat and stir-fry briefly with 1.5 teaspoons of salt, and 1/2 teaspoon of monosodium glutamate.

    Then, add the filtered water for the crab soup and cook for about 10 minutes until it boils, then reduce the heat to low and simmer.

  • Cook the crab soup with watercress

    After the crab soup boils, add the watercress, add 1 teaspoon of fish sauce, and 1/2 teaspoon of monosodium glutamate, cook until the soup boils strongly again, then taste and adjust seasoning before turning off the heat.
