Prepare the ingredients
Pick the leaves and young tops of the amaranth, remove any damaged leaves, then wash thoroughly and drain.
For the shrimp, wash them clean, then remove the head and antennae, and peel the shrimp. Next, split the shrimp lengthwise into two parts and use a knife to extract the black vein along the shrimp’s back. If the shrimp are large, you can cut them in half or into thirds.

Marinate the shrimp
After cleaning the shrimp, marinate them with 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 1/2 teaspoon of pepper for 15 minutes.

Cook the soup
After marinating the shrimp, you place a pot on the stove, add about 1 tablespoon of cooking oil, then add the shrimp and stir-fry until cooked.
Next, pour in 1.5 liters of water, bring to a boil, skim off the foam (if any), and then add the amaranth.
Season with an additional 1/2 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of pepper into the pot of soup and stir well.
Then cook on the stove for about 2 more minutes and turn off the heat.
