  • To choose good amaranth, you should select amaranth leaves that are bright green or bright red.
  • Good amaranth will not be bruised, rotten, with firm and hard stems, not soft to avoid buying old, wilted amaranth.

How to choose fresh and delicious shrimp

  • Fresh shrimp should have a slightly curved body, firm and tight flesh. The head and legs of the shrimp must be tightly attached to the body.
  • The shell of fresh shrimp must be shiny, smooth, and the area between the shrimp’s body should be clear.
  • Avoid buying shrimp that are slimy or have an unusual fishy smell. Shrimp whose legs have turned black should also not be purchased as this is a sign that they have spoiled.

  • Prepare the ingredients

    Pick the leaves and young tops of the amaranth, remove any damaged leaves, then wash thoroughly and drain.

    For the shrimp, wash them clean, then remove the head and antennae, and peel the shrimp. Next, split the shrimp lengthwise into two parts and use a knife to extract the black vein along the shrimp’s back. If the shrimp are large, you can cut them in half or into thirds.

  • Marinate the shrimp

    After cleaning the shrimp, marinate them with 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 1/2 teaspoon of pepper for 15 minutes.

  • Cook the soup

    After marinating the shrimp, you place a pot on the stove, add about 1 tablespoon of cooking oil, then add the shrimp and stir-fry until cooked.

    Next, pour in 1.5 liters of water, bring to a boil, skim off the foam (if any), and then add the amaranth.

    Season with an additional 1/2 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of pepper into the pot of soup and stir well.

    Then cook on the stove for about 2 more minutes and turn off the heat.
