  • Natural ripe tomatoes have a plump skin and bright red color. If you look closely, you will see specks of resin in the flesh through the skin. When you cut the fruit, you will see the flesh is ripe red and has a lot of pulp and white seeds.
  • You should choose tomatoes that feel firm in your hand; avoid those that are soft as they spoil quickly.
  • If the stem of the tomato is fresh green and firmly attached to the body, it means the fruit has ripened naturally.
  • Compared to naturally ripened tomatoes, chemically treated tomatoes usually lack fragrance, are not red, and are quite hard. When cooked, they become mushy very slowly, have little pulp, and a pale red color.

How to choose fresh chicken

  • You should choose chicken thighs with light yellow skin, smooth to the touch, firm in hand, and when pressed lightly, the meat has elasticity.
  • Additionally, you should choose chicken thighs with pinkish-red meat, firm, without any foul smell or slimy residue.
  • Avoid choosing thighs with loose skin that does not cling tightly to the meat. Also, steer clear of chicken thighs that are bruised, have blood clots, or have dark colors.

How to choose fresh and delicious tilapia fish

  • It is advisable to choose fish that are still alive and swimming vigorously in the tank.
  • Choose fish that have clear eyes, shiny scales, pink gills, a flat belly, and are not swollen.
  • Additionally, if you see fish with their mouths tightly closed, you can press your hand against the fish’s body; if it has good elasticity and does not indent, it is fresh.
  • Avoid choosing fish with swollen bellies, weak swimming, pale colors, or a fishy smell resembling ammonia.

How to prepare Tomato Hotpot

  • Prepare tomatoes and other vegetables

    First, wash the tomatoes, cut 5 of them into small pieces, and cut the remaining tomato into wedges to add to the hotpot.

    Next, wash the seafood mushrooms and bok choy thoroughly and let them drain well.

    Clean the shiitake mushrooms, separating the stems from the caps. Then, chop the mushroom caps finely and blend them with 1 teaspoon of salt.

    Tip: You can reserve about 4 – 5 shiitake caps to add to the hotpot!

    Green onions and cilantro should have their roots removed and be washed clean. Leave the green onions whole and chop the cilantro finely.

    Finally, peel the shallots and garlic, and mince them finely.

  • Prepare meats and fish

    Wash the fresh beef, let it drain, and slice it thinly for easy eating.

    Remove the bones from the chicken thighs, then roll the meat tightly, wrap it in plastic wrap, and place it in the freezer for 1 hour. Use the bones to make broth, while the meat is for dipping in the hotpot.

    Next, wash the red tilapia, fillet the meat for dipping in the hotpot, and then slice it thinly. Cut the remaining fish meat and bones in half to simmer with the broth.

  • Sauté Shiitake Mushrooms and Tomatoes

    Place a pan on the stove, add 1/2 of the minced garlic and minced shallots, then sauté until fragrant. Next, add the ground Shiitake mushrooms and sauté over medium heat for about 3 minutes.

    After 3 minutes, add in 1/2 cup of water, 1/3 cup of soy sauce, and 1.5 teaspoons of sugar. Stir well and simmer over low heat for 5 minutes to let the mushrooms absorb the seasoning, then transfer to a bowl to cool for dipping sauce preparation.

    Continue using the same pan that was used to sauté the mushrooms, add in 4 star anise, 1 cinnamon stick, a little dried Thai basil, mushroom stems, and tomatoes. Stir the mixture for about 3 minutes until the tomatoes release their juice.

    Then, add in 1 teaspoon of salt, 1 teaspoon of sugar, and 1/2 cup of water. Cover and simmer the mixture over low heat until the tomatoes soften and become syrupy, then turn off the heat.

  • Simmer the broth and cook the tomato hotpot

    Place a pot on the stove, add 3 tablespoons of cooking oil, and the remaining half of the minced garlic, then sauté until fragrant. After the garlic is fragrant, scoop it out into a bowl to use later for the dipping sauce.

    Next, in the pot where you sautéed the garlic, add 2 liters of water along with the prepared fish bones, 3 chicken thigh bones, 5 stalks of green onions, 2 cardamom pods, and 1 teaspoon of salt. Simmer the broth over medium-low heat for about 45 minutes.

    Tip: To keep the broth clear, remember to skim the foam regularly!

    After 45 minutes, strain the sautéed tomatoes into the broth and add 1 teaspoon of sugar, 1.5 teaspoons of seasoning powder, and continue to simmer for another 15 minutes.

  • Prepare the mushroom sauce and finish

    To prepare the dipping sauce, add the sautéed shiitake mushrooms, a little chopped cilantro, 1 tablespoon of roasted sesame seeds, chopped chili, 3 teaspoons of soy sauce, and fried garlic into a bowl. Mix well to combine.

    Strain the broth you just cooked through a sieve into the hot pot. Next, slice the frozen chicken into thin pieces.

    Finally, all that’s left to do is dip the meat, vegetables, and mushrooms into the hot pot, then enjoy with the freshly made mushroom sauce!
