Frog meat 300 gr Turmeric 1 bulb Garlic 1 bulb Eggplant 200 gr (round eggplant) Red onion 2 bulbs Betel leaves 10 gr Fermented rice 2 tablespoons Fish sauce 1 tablespoon Common seasoning a little (Salt/seasoning powder/msg)

How to Make Frog Stew with Eggplant

  • Prepare the ingredients

    To save time, you can buy pre-prepared frogs at the market or supermarket, removing the internal organs of the frogs for health safety.

    Wash the frogs with a solution of water and vinegar or alcohol along with smashed ginger to eliminate the fishy smell and any blood stains. After that, rinse with cold water, drain in a basket, and cut into bite-sized pieces.

    Peel and finely chop the onion and garlic.

    Peel the turmeric, wash it clean, and pound it finely.

    Remove the stem from the eggplant, slice it into bite-sized pieces, and soak it in salted water to prevent browning.

  • Marinate the frogs

    Put 300g of prepared frog meat, chopped onion and garlic, pounded turmeric, 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of fish sauce into a bowl and mix well. Marinate the frogs for about 15 – 20 minutes for the meat to absorb the spices.

    Put a pan on the stove, add some cooking oil and stir-fry the frog until it firms up. Then add the eggplant, season with more spices and 2 tablespoons of fermented rice, and stir well.

    Serve the frog stew with eggplant in a bowl along with finely chopped Vietnamese balm and chili to enhance the flavor and aroma of the dish.

    Note:

    • The amount of fermented rice can be adjusted according to your preference for sourness.
    • If you don’t have fermented rice, you can use vinegar.

How to Cook Frog Stew with Eggplant (recipe shared by a user)

  • Prepare the ingredients

    Remove the stem from the eggplant, cut it in half, and soak it in salted water for about 15 minutes. Wash the wild pepper leaves and slice them thinly. Crush the shallots.

    Clean the frogs, cut them into small pieces, then place them in a bowl and season with 1/2 tablespoon of salt, 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning powder, and 1/4 tablespoon of ground pepper.

    Next, add crushed turmeric to the frog meat, mix well, and marinate for about 15 minutes to allow the frogs to absorb the seasoning.

  • Good quality frogs are those that are large, fat, have a slender head, bright eyes, strong limbs, with bright yellow or black spots, and a white or slightly yellow belly.
