Pork hock 300 gr Green pumpkin 200 gr (winter melon) Green onions 3 stalks Red onion 2 bulbs (chopped) Ginger 1 piece (sliced) Cooking oil 1/2 tablespoon Common spices a little (salt/ seasoning powder/ monosodium glutamate/ pepper)

  • You should buy the front trotters because they are more active, so the meat will be thinner, softer, sweeter, and have more tendons, which makes the stews softer, absorbs seasonings better, and tastes better. The shape of the front trotters is also usually smaller and more attractive.
  • It is advisable to buy a piece of firm trotter meat, with evenly cut muscle fibers, dry, and with natural color.
  • The meat should be bright pink, without any unpleasant smell, and should bounce back when pressed.
  • The hooves should be intact and not detached for the pork trotters to be fresh.

How to choose fresh green squash (winter melon)

  • Fresh green squash is characterized by large, plump fruits with green skin. Fruits that are black are overripe, have many seeds, and will taste sour when eaten.
  • You should feel the young squash is heavy and firm, and when pressing your fingernail into it, it can leave a mark, but when you touch it, the squash feels fresh, and the skin is not soft (a soft squash is a wilted squash).
  • Good squash has a large, thick stem; these are the young fruits that are just right, with a characteristic sweet taste.

How to cook Stewed Pork Leg with Green Pumpkin

  • Prepare and marinate the pork leg

    Wash the pork leg with diluted salt water. Use a knife to scrape off any remaining hair on the pork leg.

    Next, to eliminate the odor, place the pork leg in a pot with 1 liter of water and 1 sliced ginger root, boil for about 1 minute, then take the pork leg out and rinse it clean.

    How to clean pork leg properly, without odor:
    • Method 1: Blanch the pork leg in boiling water for 2 minutes, then take it out, rinse it again with water, and start using it.
    • Method 2: Char it over fire before cooking, which not only makes the pork leg tastier but also removes any remaining hair.
    • Method 3: Use vinegar, alcohol, or lemon juice to rub on all sides of the pork leg and in the crevices to eliminate the fishy smell.

    Marinate the pork leg with minced shallots, 1 teaspoon of seasoning, 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate. Let it sit for about 30 minutes to absorb the spices.

  • Prepare other ingredients

    Peel the green pumpkin, wash it clean, and cut it into pieces about the thickness of a finger. Remove the roots from the green onions, wash them clean, and chop them finely.

    Tip: To keep the green pumpkin sweet and rich, do not cut it too thin.

    Place a pot on the stove, add 1/2 tablespoon of cooking oil along with the marinated pork leg, and sauté for about 2 minutes until the pork leg is firm.

    Next, add about 1.5 liters of water to the pot and bring it to a boil. Once boiling, skim off the foam, reduce the heat, add 1 teaspoon of salt, and 1 tablespoon of seasoning, then cover and braise the pork leg for 30 minutes.

    Then, add 500ml of water, green squash, along with 1 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate into the pot, and braise for another 10 minutes.

    Finally, when the pork leg and green squash are cooked, add chopped green onions, season to taste, and then ladle the soup into bowls.

    Sprinkle a little ground pepper on top to create a fragrant aroma, and for added appeal, you can enjoy it right away.
