Ingredients for Crab Ball Papaya Soup For 4 people

Green papaya 300 gr Green mung beans with husk 50 gr Straw mushrooms 50 gr Crab meat 50 gr Ground pork 30 gr Sausage 50 gr Minced pork fat 20 gr Perilla leaves 30 gr Minced shallots 20 gr Wood ear mushrooms 2 pieces Carrot 1/2 piece

Papaya for soup:

  • You should choose fresh duck-billed papayas that feel heavy, firm, slightly yellowish, and elongated for a sweeter soup.
  • If you buy papayas on rainy days or a few days after rain, the papayas may taste a bit bland.

How to choose fresh, firm crabs:

  • When selecting crabs, buyers need to squeeze the shell and belly of the crab to see if it’s hard; if it is, it indicates that the crab is firm. Conversely, a soft crab means it has little meat.
  • Lightly squeeze the legs of the swimming crab; if the crab struggles with the entire leg, it is healthy and has good meat.
  • Check the color of the skin on the upper claw. If it is pinkish-red or dark pink, the crab has a lot of meat.

Choose straw mushrooms that have not fully opened, with round caps that haven’t formed umbrella shapes, and squeeze gently to ensure the mushrooms are still firm and not mushy.

How to make Papaya Crab Ball Soup

  • Prepare the papaya

    Peel the papaya you bought, cut it in half, and remove the seeds inside.

    Cut it into bite-sized pieces, then soak the papaya in a bowl of diluted saltwater and squeeze in half a lemon for 5 minutes; afterward, drain the water and proceed to the next steps.

    You can buy minced pork or mince it at home.

    Peel the carrot and cut it into bite-sized pieces.

    Soak the mung beans in warm water for about 10 minutes, then drain.

    Wash the green onions and perilla leaves, then drain and chop them finely.

    Soak the wood ear mushrooms in water for about 20 minutes until they expand, then clean the roots with your hands, rinse them with clean water, drain, and chop them finely.

    Soak the straw mushrooms in diluted salt water for about 20 minutes, then rinse with clean water and drain; cut half of them with a cross on top, and cut the other half in half.

    Tip: Before preparing, use a sharp knife to gently scrape the roots, and clean the mushroom roots thoroughly; the straw mushrooms will be cleaner and look more appealing.

  • Make crab balls

    Add minced pork, wood ear mushrooms, crab meat, and fried pork fat into a bowl.

    Season: Add 1/2 teaspoon of seasoning powder and a little pepper to the bowl, then mix all the ingredients to absorb the seasoning.

    Spread a thin layer of oil on a plate, then divide the filling into 12 crab balls and place them on the plate.

    Tip: Add fried pork fat to the crab balls for a more aromatic and richer filling.

    You put a pot on the stove, wait for the pot to heat up, then add 2 tablespoons of cooking oil and fry minced shallots until fragrant.

    When the shallots are fragrant, add 1.2 liters of water, then add the soaked mung beans and cook over medium heat for about 5 minutes.

    Then add the papaya, carrot, straw mushrooms, and crab meatballs into the pot.

    Seasoning: Add 1/2 teaspoon of MSG, 1 tablespoon of seasoning powder, and 1 teaspoon of fish sauce.

    When the soup boils again, add the perilla leaves and then turn off the heat.

    Tip: Add the perilla leaves last to give the soup the distinctive aroma of perilla.

    The soup has the sweetness of ripe papaya, the nutty flavor of mung beans, and the sweet, fatty crab meatballs that you can eat repeatedly without getting bored. You scoop the soup into a bowl and invite your family to enjoy it, it can be served with hot rice or noodles, and with a bowl of spicy chili fish sauce, it’s truly wonderful.
