  • When selecting pork ribs, you should pay attention to choosing fresh ribs, the meat should be pink, have good elasticity, and not have an unusual odor.
  • You should choose pieces of ribs that have flat and small bones. Such ribs have less bone and more meat compared to those with large and round bones.
  • Do not buy ribs that have a dark meat color, lack elasticity, have an unpleasant smell, and are slimy because they show signs of spoilage and deterioration.

  • Preparing the ingredients

    Peel the papaya, cut it in half to remove the seeds. Rinse it a few times with water, drain, and then cut it into bite-sized pieces.

    • You use a knife to lightly score the papaya skin with many cuts to let the white sap flow out.
    • Then wash it thoroughly, soak it in water for 15 minutes, drain, and start peeling.

    To remove the odor of the spare ribs, you should rub them directly with a little salt for 5 minutes. Then rinse with water several times until clean and drain.

    Chives should have the roots and wilted leaves cut off, wash thoroughly, and let them drain. Cut the chive tops and pound them with 1/2 teaspoon of ground pepper. The chive leaves should be cut into pieces about 2 finger lengths.

  • Blanch and simmer the ribs

    Put the spare ribs into a pot, fill with water and add 1 teaspoon of salt. Bring the water to a rolling boil, then remove the ribs and rinse them with cold water.

    Next, put the blanched ribs into the pot and fill it with water again. Place the pot on the stove, cover it, and turn the heat to high. When the water boils, reduce to medium heat and simmer for about 30 minutes until the ribs are tender and the broth is fragrant and sweet.

    Tip:

    • To increase the deodorizing effect, you can add several crushed stalks of lemongrass, a few slices of ginger, or a little white wine to the pot.
    • Do not blanch the spare ribs for too long as it will reduce the natural sweetness of the dish.
    • Blanching the ribs and skimming the foam while simmering will help remove dirt attached to the ribs and make the soup clearer after cooking.

  • Cooking papaya soup with ribs

    Once the ribs are cooked, add the papaya to the pot and add the crushed onion and pepper. Continue to cover the pot and simmer the papaya for another 15 – 20 minutes over medium heat until the papaya is cooked.

    After the papaya has softened, gradually add 1 teaspoon of salt, 2 teaspoons of sugar, 2 teaspoons of monosodium glutamate, and 3 teaspoons of seasoning into the pot, adjust the seasoning to taste. Finally, add the chopped green onion and let the soup boil evenly for another 2 minutes before turning off the heat.

    Scoop the soup into a bowl, sprinkle a little ground pepper on top, and enjoy it while it’s still hot. The papaya soup has a very eye-catching golden color, tender and delicious ribs, a rich flavor, and sweet soft papaya that pairs perfectly with hot rice and a bowl of spicy chili sauce.
