How to choose good beef legs
- You should choose the hind legs, with more meat and thin skin.
- Press the beef leg with your hand; if the meat feels firm and not mushy, it’s good.
- Choose beef legs with a little blood still on the hooves and a deep pink color.
- You should buy beef legs at reputable large supermarkets to ensure food safety.
How to choose fresh white radishes
- You should buy radishes that still have leaves, as this indicates they are fresh.
- They should have a uniform shape, smooth texture, and feel firm when held.
- The radishes need to have a consistent color and intact skin.
- Avoid buying radishes with black or yellow spots, those that feel soft in hand and show signs of decay or sliminess.

How to make Grilled Beef Hot Pot with Lemongrass

Prepare Ingredients
Radish is washed clean, peeled with a knife. Then cut into bite-sized pieces.
Ginger is washed, dirt is peeled off, then cut the ginger in half. You can peel it or leave the skin on.
Onion is peeled, cut in half. Lemongrass is cut off the ends and smashed. Chili is cut off the stem.

Prepare and Grill Pork Hock
To remove the smell of pork hock, wash it clean with diluted salt water, scrape off the hair, remove the hooves, and then wash again with clean water about 2 – 3 times.
How to prepare pork hock without smell:
- Blanch the pork hock in boiling water for about 1 minute to remove dirt and smell. Then wash the pork hock again with clean water and let it drain.
- Or you can grill the hooves briefly and then blanch them in boiling water.
- Use salt or lemon juice to rub on the surface of the pork hock and soak for about 2 – 3 minutes, then wash again with clean water.
After washing, chop the pork leg into bite-sized pieces.
Place the pork leg, onion, ginger, and chili on the grill rack and put it into the roasting pot. Set the temperature to 200 degrees Celsius and roast for 10 minutes.
Tip: Roasting the pork leg first will help speed up the boiling process and make the pork leg more fragrant.

Cooking hotpot
Place a pot on the stove, add about 1.5 – 2 liters of water into the pot, and set the heat to medium. Next, add 100g of rock sugar, smashed lemongrass, white radish, and pork trotters along with all the grilled ingredients into the pot.
Cover the pot and simmer on low heat for about 45 minutes until the trotters begin to soften. When the water in the pot starts to boil, open the lid and continue to simmer the trotters on high heat for about 1.5 to 2 hours until they are tender.
During the simmering process, remember to skim off the white foam to keep the broth clear and add more water if the broth in the pot gets low.
Finally, season to taste, stir well to dissolve the spices, and then turn off the heat.
Note:
- If you have a pressure cooker, using it will make the trotters soften faster and taste better.
- You can use fresh coconut water instead of plain water to give the broth a naturally sweet flavor without needing to use sugar.

The beef hot pot simmered with lemongrass has a spicy aroma from ginger and lemongrass.
