Ingredients for Hanoi Fish Noodle For 4 people

- Choose live fish for fresh and sweet meat, not mushy.
- The fish should be intact, with no scratches or scales missing.
- The fish body should be plump, large, and smooth, with a firm body, bright red gills, and a head proportionate to the body.
How to make Hanoi Fish Noodles

Cooking the bone broth
Buy tilapia fish, fillet the meat and separate the bones.
Use a pot to boil 300ml of water, then add the pork bones and blanch for about 2 minutes until the blood in the bones is completely released.
Next, turn off the stove and wash the blanched bones thoroughly.
Boil another 300ml of water, add the fish head and bones to blanch for about 1 minute until the fish stops bubbling.
Then, remove the fish head and bones and wash them clean.
Pour 1.3 – 1.5 liters of water into the pot. Continue to add the pork bones, fish head, and bones that were just blanched into the pot to simmer for a flavorful broth.

Preparing the ingredients
Hold a knife at a 30 – 45 degree angle to slice the tilapia into pieces about 2 – 2.5 cm long.
Cut the tomatoes into wedges, and finely chop the shallots and herbs.
Cut the green onions to separate the bulbs, and chop the leaves finely. Split the green onion bulbs into four and soak them in water to keep the onion strands curled.
Cut the dill into pieces of 3 – 4 cm. Leave the coriander and perilla leaves whole.
Cut the large piece of soft tofu in half, then cut it into small pieces.

Marinate the fish
Add 1/2 spoon of lemon juice to the sliced fish to help the fried fish become firmer and crispier, preventing it from breaking.
Next, add 1/2 spoon of shrimp paste along with 1 teaspoon of monosodium glutamate, and 1 teaspoon of turmeric powder to the fish, then mix thoroughly so that the fish absorbs the seasoning evenly. Marinate the fish for about 15-20 minutes.

Fry the tofu and fish
Add cooking oil to a pan and heat until the oil is hot, then add the freshly cut tofu pieces to fry. Fry until the tofu is golden and crispy, then remove to a plate.
After marinating, sprinkle a little frying flour evenly over the fish surface so that after frying, the fish has a moderate crispiness.
Add 200ml of cooking oil to the pan, heat until the pan is hot, then drop the fish in to fry, you should fry the fish submerged in oil. Fry until golden, then flip to the other side to ensure the fish is evenly fried, then remove to a plate.
Tip: When frying the fish, use paper towels to absorb any excess water from the fish to avoid splashing oil while frying!

Cook the broth
First, sauté the shallots until fragrant, then add the tomatoes and a little turmeric powder, stir briefly until the tomatoes start to thicken, then prepare to add to the broth pot.
Remove the fish heads, fish bones, and pork bones from the broth pot. Then add the tomatoes and shallots to the pot and season with salt, monosodium glutamate, and lemon juice to taste.

Final product
Finally, you just need to place the noodles in a bowl, add the fried tofu and fish along with the accompanying vegetables, then pour the hot broth over, and you can enjoy a delicious bowl of fish noodle right away!
Small tips to successfully make the dish:
- When adding crispy flour to the marinated fish, only use a small amount to coat a thin layer on the outside so as not to cover the fish meat. Once mixed, you should no longer see the crispy flour.
- Fry the fish until golden and then remove it immediately to prevent the fish from drying out.
- To make the broth visually appealing, don’t forget to add turmeric while stirring the tomatoes!
