How to choose fresh and quality local chicken
-
Good chicken will have a characteristic shiny yellow skin, thin outer skin that feels smooth to the touch, and good elasticity.
-
The inner meat should have a natural reddish-pink color, not too pale or too dark, and should not have bruises or blood clots.
-
Avoid buying chicken that is slightly pale or has turned dark gray as these are chickens that died before being processed.

How to choose delicious jujube
- Select fruits that are dark red or purple in color.
- Ripe jujube fruits usually have wrinkled skin and a distinctive aroma.
- The flesh inside is soft, with hard seeds.
- The red jujube from Tân Cương, China, is a delicious variety. When buying red jujubes, you should choose a reputable manufacturer and a reliable address to ensure safety.

How to choose fresh carrots
- Choose carrots that are of moderate size, not too large, long and slender, and feel solid when held.
- Fresh carrots should be bright orange, smooth-skinned, not rough, with fresh green tops still firmly attached to the body.
- Avoid selecting carrots with wilted, bruised tops, slimy bodies, soft, mushy flesh, and many dark spots on the surface, as these are old carrots that may affect your health.
- Generally, larger carrots are not as tasty as smaller ones because they are older, have more fiber, and contain very few nutrients.

How to prepare Sichuan Chicken Hot Pot
-
Prepare the ingredients
After buying the chicken, rinse it briefly and then soak the chicken in diluted salt water for 15 minutes to remove all impurities. After that, take the chicken out and rinse it with clean water 2-3 more times.
Then, chop the chicken into separate pieces and cut the parts into small chunks that are bite-sized.
Wash the carrots, peel them, and cut them into thin slices. You can also carve the slices into decorative shapes.
Soak the snow fungus in warm water for about 15 minutes to soften it, then drain the water and squeeze lightly to remove excess moisture.
Chop the green onions and shallots finely.
How to clean chicken meat, no odor
- Besides the above method, you can soak the chicken in rice wine or vinegar to effectively eliminate the chicken’s odor.
- Another method instead of rubbing the chicken with crushed ginger is to use lemon and rub it similarly for about 10 minutes, then rinse with clean water.
- Be sure to remove the oil bag, fine feathers, and blood vessels to reduce the chicken’s odor.

-
Marinate the chicken
Put the chopped chicken into a bowl, marinate the chicken with 1 tablespoon of chopped green onions, 1 tablespoon of chopped shallots, and 4 tablespoons of soy sauce.
Next, mix well and marinate for 20 minutes to let the chicken absorb the flavors.
-
Sauté the chicken
Place a pot on the stove, add about 2 tablespoons of cooking oil into the pot, then add about 3g of Sichuan pepper, 5g of dried chili, and 5g of fresh chili into the pot. Stir the ingredients over medium heat.
When the pepper and chili start to release their aroma, gradually add the chicken into the pot and sauté until the chicken is firm and cooked evenly.
-
Cooking Hot Pot
After briefly stir-frying the chicken to firm it up, add about 1.5 liters of filtered water to the pot, stir well, and bring to a boil for about 10 minutes over medium heat. Skim off the foam to keep the broth clear.
Next, add 20g of jujube and 10g of goji berries to the pot, stir gently, and cook for about 10 minutes until the water boils again.
Then, gradually add 20g of carrots, 50g of young corn, and 30g of snow fungus, stir well, and cook for about 5 – 7 minutes until the carrots and young corn are cooked.
Season the hot pot with 2 teaspoons of seasoning powder, 3 teaspoons of white vinegar, 3 teaspoons of sugar, 1 teaspoon of salt, and 1 teaspoon of monosodium glutamate, stirring well to dissolve the seasonings.
Finally, chop the green onions and add them to the pot, cooking for about 5 minutes before turning off the heat.
