Prepare the crab
How to clean the crab:
– After buying the crab, place it in a basin filled with plenty of water, and use a stick to stir several times to remove dirt and impurities stuck to the crab’s body.
– Remove the apron and mouth of the crab, and soak the body and crab meat in diluted salt water to allow any worms or parasites inside the crab to come out.
– Finally, rinse the crab thoroughly with water.
Once you have finished cleaning, separate the crab roe, then put the crab into a meat grinder to grind, or you can use a mortar and pestle to mash it.
– After grinding, place the crab in a bowl and add 1 liter of filtered water, stirring well to separate the crab meat.
– Next, strain the crab through a sieve; the remaining crab residue in the sieve should be put back into the bowl, and add another liter of water, then stir well.
– Continue to strain the crab through the sieve again to obtain the clearest crab broth.

Prepare other ingredients
– Pork bones should be blanched in boiling water to firm them up, then rinse with cold water.
– Clean the white radish and carrot, peel them, and cut into pieces about 0.5 cm thick.
– Boil the quail eggs for about 5 minutes until cooked, then transfer them to a bowl of cold water to cool quickly. After that, peel the eggs.
– Wash the green onions, cilantro, and water celery with water, then chop them finely. Set aside the roots of the green onions.
– For the dry rice noodle, use your hands to separate the noodles and soak them in a bowl of cold water for about 5 – 10 minutes. Then, quickly blanch them in boiling water with a pinch of salt to prevent sticking, and immediately take the noodles out and place them in a bowl of cold water for about 2 minutes to cool down.

Cooking the broth
– Place the pot of crab water on the stove, add a little salt, and bring the water to a boil.
– Cook until the water is very clear, and the crab meat floats to the surface, then scoop the crab meat into a bowl.
– In the remaining crab water, add pork bones and simmer for 30 minutes.
– Next, add the white radish and carrot into the pot.
– Then, add 1/2 tablespoon of salt, 1 tablespoon of seasoning powder, and 1/2 tablespoon of sugar, stir well, and cook for an additional 10 minutes.

Steaming crab cake
– Mix the crab meat with minced pork and add 1/2 tablespoon of seasoning powder, 1/2 tablespoon of sugar, and 1/2 tablespoon of ground pepper. Then, mix the mixture thoroughly.
– Add the crab roe, 1 raw egg, and a little minced shallots into the bowl and continue mixing well.
– Evenly spread the mixture in the bowl, then place the bowl in a steamer and steam for about 15 minutes. When the crab cake is cooked, take it out.
