How to prepare Lao-style Fish Noodle Soup

Prepare and marinate the fish
Wash the fish fillet and drain, put the fish in a bowl with 1 tablespoon of seasoning powder, 1 tablespoon of fish sauce, mix well.

Prepare the ingredients
Lemongrass is washed clean, smashed with a meat tenderizer, and then cut into pieces about 5cm long. The galangal is peeled, washed, and smashed with a meat tenderizer. Shallots are peeled and smashed with a meat tenderizer.
Garlic is minced and placed in a bowl. Chili is minced and placed in a bowl.
Celery is peeled, chopped finely, and washed clean. Cabbage is shredded and washed clean.

Sauté the ingredients
Put 50ml of oil in a pot, add 1/2 of the minced garlic and minced chili, stir well over low heat, then add the remaining minced garlic and stir well over medium heat for 3 minutes, turn off the heat, add 1 teaspoon of seasoning, and mix well.
Green onions are washed and cut into pieces about 5 cm long. Add oil to the pan to lightly fry the onions.

Cook the broth
Add 1 tablespoon of cooking oil to the pot, when the oil is hot, add the shrimp shells and stir well, then add 2 liters of water, cover the pot and cook until boiling, then turn off the heat.
Add 1 tablespoon of satay oil to the pot along with garlic, shallots, and galangal, mix well, then add the shrimp boiling water into the pot, cover and cook for 15 minutes.
Add 400ml of coconut milk along with 30g of rock sugar, 1 tablespoon of seasoning powder, 2 tablespoons of fish sauce, 2/3 teaspoon of salt, 2/3 tablespoon of sugar, lemon juice, grated lemon peel, and satay chili, stir well, then turn off the heat.

Fry the fish
Add oil to the pan along with turmeric, sprinkle a thin layer of flour on the fish while frying, then add the fish to the pan and fry, turning regularly until the fish is golden brown on both sides.
Tip:
- You can add a little salt or chili to the oil to reduce the splattering, use chopsticks to check if the oil is hot enough.
- You should lower the heat and then add the fish so that the fish cooks through and becomes crispier.
