How to choose fresh and delicious chicken
- Choose chicken with pink-red meat, without any foul or strange smell, with no bruises or purple spots on the skin. Avoid selecting dark-skinned chickens as they are likely to be dead before processing.
- Use your hand to press on the (thigh, breast) area to check if the chicken has been injected with water. If it feels mushy, slippery, or deformed, do not buy it.
- If the chicken skin is yellow and the inner fat is white, it is certain that the chicken has been artificially colored, so do not buy it.
- To choose good native chicken, select pieces of meat that have light yellow skin, thin, smooth, high elasticity, and only deep yellow in some places like the breast, wings, back, small and firm body, with a narrow breast.
- For frozen chicken in supermarkets, check for reputable origin and expiration dates on the packaging to ensure quality.
How to choose other spices and ingredients
- You can easily find ingredients for this dish such as: star anise, cloves, fennel powder, mint leaves, cardamom,… at herbal spice shops or on e-commerce sites.
- Garam Masala Powder: is a spice blend made of spicy ingredients like coriander, fennel, cardamom, cloves, black pepper, cinnamon, and nutmeg. This spice powder is specifically used for Indian dishes to ensure authentic flavors. You can find garam masala on e-commerce sites or in food stores.
- Indian Basmati Rice: can be easily purchased at food stores, supermarkets, or on e-commerce sites. This is the characteristic rice used to prepare this dish and is also widely used in Indian cuisine. Using regular rice will not impart the distinctive flavor, and the rice may become too dry or too mushy.

How to prepare Biryani Chicken Rice

Prepare the chicken
To remove the odor of the chicken, after purchasing, pluck the small black feathers still stuck on the chicken skin, rub a little salt or lemon on the skin to clean it, then rinse with water to ensure it is clean and let it drain.
Then, make straight cuts on the chicken meat so that the marinade will penetrate better.

Prepare other ingredients
Peel the onion and slice it thinly. Then, heat a pan and add oil until it reaches about half an inch deep, when the oil is hot, add the onion to fry until fragrant.
Rinse the rice, add water just covering the rice and soak for about 30 minutes before cooking.
Remove the stems from the coriander, keeping only the leaves, then chop finely. Remove the seeds from the tomatoes and dice them.
Tip: Soaking the rice before cooking helps the rice grains to be softer and stickier after being cooked.

Marinate the chicken
Gradually add 2 tablespoons of minced garlic, 2 tablespoons of minced ginger, 2 tablespoons of salt, 1 tablespoon of garam masala powder (Indian spice mix), 1 tablespoon of coriander powder, 1 tablespoon of chili powder, 1 tablespoon of fennel powder, 1/2 tablespoon of turmeric powder, 100g of yogurt, 1/2 the amount of finely chopped coriander, 2 mint leaves, and 1/3 the amount of fried shallots into the bowl of chicken. Mix well and marinate for about 1 hour for the chicken to absorb the spices.
Note:
- If you can’t find yogurt, you can skip it in the marinade and it will be fine. But if you have it, it will help the chicken to be tender and fatty, making the dish tastier.
- If there are small children at home, you should omit the chili powder so they can eat it.

Stir-fry the chicken
Place a pan on the stove, add a little oil to fry the shallots in the pan. When the oil is hot, add chopped tomatoes to the pan, stir-fry on medium heat for about 3 – 5 minutes until the tomatoes are cooked, then pour in all the marinated chicken to stir-fry together.
When the chicken starts to brown, pour in 1/2 cup of water into the pan. Cover the lid, lower the heat, and simmer for about 20 minutes, season again to taste, then turn off the heat and scoop the chicken onto a plate.

Cook rice and mix with chicken
Add about 2 liters of water to the pot, place the pot on the stove. Next, add star anise, cinnamon, bay leaf, cardamom, and a little black pepper into the pot. Cover the lid and bring to a boil over medium heat.
Then add the rice to the pot, ensuring the water level is about one finger joint above the rice surface. Cook the rice until it is about 70 – 80% done for about 20 minutes, then drain the water and scoop 1/2 of the rice evenly across the bottom of the pot.
After that, place the cooked chicken on top, sprinkle with a little fried onion, parsley, and mint leaves. Finally, add the remaining rice into the pot, covering the chicken with it, then top with all the fried onion, parsley, and mint leaves.
Melt unsalted butter and mix it with a few drops of red food coloring or saffron, and stir well. Then, drizzle it over the rice surface. Cover the lid again and continue to cook for about 30 – 40 minutes on low heat until the rice is completely cooked, then turn off the heat.
Tip: You can add boiled eggs to the pot to cook along with the chicken rice.

Completion
Once the dish is cooked, mix the rice and chicken together again.
Scoop the rice onto a plate, cut the boiled eggs in half and place them on top, then sprinkle a little parsley to make the dish more visually appealing.
