  • The meat should appear fresh, with no bruises or sliminess, and no unpleasant odor.

  • Prepare the meat

    Buy a block of beef and pork, rinse it with diluted salt water and clean water, drain it and place it in the refrigerator for about 20 minutes to firm up the meat for easier slicing.

    Then, use a knife to slice the meat thinly.

    Place a pot on the stove, add 1 tablespoon of sesame oil to sauté 2 tablespoons of minced ginger and 1 tablespoon of minced garlic along with 3 tablespoons of chopped onion.

    Then, add 2 tablespoons of soy sauce, 2 tablespoons of sake, and 2 tablespoons of mirin rice wine, stir well and cook for about 3 minutes.

    Next, add 2 liters of filtered water, 8 teaspoons of dashi seasoning powder, and 8 tablespoons of miso paste, stir well with 1 tablespoon of Korean chili paste, bring to a boil and turn off the heat.

    Sequentially add various vegetables and mushrooms into another pot, then arrange with fish balls and slices of beef and pork.
