What is dried seaweed? Suggestions on where to buy
- Dried seaweed (seaweed) is a type of seaweed that resembles a duck’s foot. After harvesting, the seaweed is usually dried, and before use, it is soaked in water to expand.
- After soaking, the seaweed becomes chewy, crispy, and slightly elastic, so it is often used in dessert dishes.
- You can easily find dried seaweed at dry goods stalls in the market, or at supermarkets and e-commerce websites.
How to make Spinach Jelly

Prepare dried spinach
Put the dried spinach into a basin or a bowl, add water to just cover it, and soak for about 15 minutes to allow the spinach to swell and soften.
After the spinach has softened, rinse it 2 – 3 more times with water to remove all sand and dirt, then drain it in a basket.
With 100g of dried spinach, you will have about 400g of spinach after soaking.
Tip for cleaning dried spinachWhile soaking, you can add 1/2 a lemon to reduce the fishy smell of the algae and help the spinach stay whiter. When the algae has expanded, rinse thoroughly with clean water to remove all sand, dirt, and slime.

Cook spinach jelly
Put the soaked spinach into a pot along with 1.8 liters of water, then place the pot on the stove and bring to a boil over high heat.
Once the water boils, add sugar, reduce the heat to medium, and continue to cook for about 15 more minutes until the spinach is cooked and dissolves.
Next, add crushed ginger to the pot and cook for about 5 more minutes, then turn off the heat.
Tip: If you want the spinach to be softer and dissolve more, you can cook it longer! -
Final Product
Scoop the water lily jelly into a bowl and enjoy. The water lily still retains its crunchiness, chewiness, and firmness without dissolving completely. The light ginger aroma enhances the deliciousness of the jelly.
You can eat the jelly hot or with some crushed ice; additionally, you can place the water lily jelly in the refrigerator for 30 – 45 minutes to let it set, then cut the jelly into pieces and enjoy.
