  • Delicious goat meat is fresh goat meat, tender young goat, with thin skin, all lean meat and not thick.
  • The meat color is bright red and shiny, the fibers are even and firm, and when touched, it feels smooth and elastic, especially it does not stick to the hand at all.
  • Goat meat usually has a strong smell that can be a bit unpleasant, the muscle is firm and does not leak water.
  • Pale-colored meat, which is not firm or has a foul smell, is spoiled meat, so it should not be purchased.

How to choose delicious taro

  • Choose medium or large taro roots, with the skin divided into horizontal grooves.
  • The flesh of the taro is white, light yellow, or light purple.
  • The more eyes the taro has, the more starch it contains, and the better the flavor of the taro.

How to make Goat Meat Porridge with Taro and Mustard Greens

  • Prepare and grind the goat meat

    After purchasing the goat meat, wash it thoroughly with water to remove dirt and then cut it into thin slices.

    Use white wine and shredded ginger to marinate for 2 – 3 minutes to eliminate the goat smell.

    Then wash it clean with water once more and put it into a blender.

    How to clean goat meat without odor

    • To remove the odor of goat meat, you should soak it in tea water and then stir-fry it until the water evaporates; then add some strong tea. After 2 – 3 times like that, the goat smell will disappear, and the meat will be more tender and delicious.
    • Additionally, when cooking goat meat, you can add a packet containing cardamom, cloves, hawthorn, and crushed perilla leaves, then put it in a piece of cloth and tie it tightly.
    • You can also eliminate the goat smell by rubbing the meat with a bit of white wine mixed with minced ginger. After that, rinse it with cold water. Or you can use beer instead to remove the smell.

    Slice 1 shallot into small pieces and add it to the grinder along with 1 teaspoon of pepper, 1 teaspoon of baby seasoning, 1 tablespoon of baby fish sauce, and grind it until smooth.

    Peel the taro, wash it clean, and cut it into small pieces.

    Remove the root of the chrysanthemum greens, rinse them with water, and then chop them finely.

  • Cook the porridge

    Wash 50g of rice until clean, then add the taro and water to cook.

    When the water boils, add the goat meat and a few slices of ginger to simmer with the porridge to eliminate the smell of the goat meat.

    When the porridge boils again, skim off the foam, then reduce the heat and simmer the porridge for 20 – 25 minutes.

    After that, add the chrysanthemum greens to the pot and stir for another 2 minutes before turning off the heat and ladling the porridge into bowls.
