How to choose fresh freshwater crabs
- Fresh and good-quality freshwater crabs are usually small in size, not too large, with a shell that has a dull grayish-purple color, and especially, the crabs should still be alive, with strong legs.
- Freshwater crabs with a small and pointed abdomen usually have a lot of meat, while those with a larger abdomen tend to have more roe.
- You should avoid buying crabs with eyes that have turned red, with hair on the underside of the belly, that are no longer moving, or if you press the abdomen and see bubbles rise, as that means the crab is dead.
How to choose clean, safe water spinach
- Clean, safe water spinach is bright green in color, with small tips since most water spinach with large tips is already old and will not taste good.
- In addition, observe that the leaves are still intact, not torn, and there are no signs of pest damage on the surface.
- Avoid buying water spinach when you can smell a strong chemical odor, as this may be a sign that the water spinach has not grown naturally and has been sprayed with too many chemicals.

Then, soak them in diluted salt water for about 10 minutes, rinse 1 – 2 times with water to clean, drain, and then use a knife to cut into pieces about 1 – 2 finger lengths.
Finally, peel the shallots and chop them finely.
Sauté the crab roe
Once the ingredients are ready, you heat a pan on the stove with 1 tablespoon of cooking oil over medium heat. Wait for the oil to heat up, then add the chopped shallots and sauté for about 3 minutes until fragrant.
Then, add the bowl of crab roe, using a spatula to stir-fry evenly for about 3 – 5 minutes, until you see the crab roe thickening slightly, then turn off the heat.
Cook the soup
Then, you place a pot on the stove with the crab broth that has been strained, and proceed to boil on high heat for about 7 – 10 minutes. When the water boils, and the crab broth floats on the surface, gently scoop the crab broth into a bowl using a ladle.
Next, with the same pot of broth, add all the prepared water spinach, using a ladle to gently press down so that the greens are submerged in the water, then cook for about 2 – 3 minutes on high heat.
Continue by adding the stir-fried crab meat to the pot, add 1 tablespoon of cooking oil, 1 teaspoon of salt, 1 tablespoon of fish sauce, and the crab broth, stir briefly once more and cook for about 2 – 3 minutes.
When the water boils again, season to taste, turn off the heat, and serve in a bowl to enjoy!
