How to choose good oyster mushrooms:
- You should choose mushrooms with long, thick, and firm stems; these mushrooms will be sweeter than those with small stems.
- Mushrooms that have been harvested for a long time and stored at cold temperatures often have black spots on the caps or bruises.
- You should touch the mushrooms; if they feel slimy, you shouldn’t buy them.
- You should check the expiration date before purchasing; oyster mushrooms usually have a shelf life of about 2 years; if the time exceeds 2 years, you shouldn’t buy them.
How to cook Vegetarian Abalone Porridge

Prepare the ingredients
You should wash the rice thoroughly and soak it for about 1 hour before cooking to make the porridge softer.
Note:
You can also cook directly, but the cooking time for the porridge to be soft and delicious will be longer if the rice is not soaked.
Tip:
- If you want the porridge to be even softer, after soaking the rice for 1 hour, you can lightly crush the rice grains.
- If cooking porridge for small children, you can blend it in a blender until smooth.
For the abalone mushrooms, we will shred them into small pieces, the smaller the better.
Carrots and mushrooms should be diced small as well, the smaller the better.

Cook the porridge
Add the rice to the pot and pour in enough water to cover the rice by about 2 finger widths. Bring it to a boil until the rice expands and thickens, then continue to add 1 – 2 cups of water, and keep doing this for about 1.5 hours until the porridge is soft.
Note:
- When the water starts to boil, keep the heat medium, stirring the porridge every 3 – 5 minutes to prevent it from burning.
- For abalone porridge, the softer the porridge, the better.
When the porridge is cooked, add in the prepared carrots, mushrooms, and oyster mushrooms. Stir well for 3 – 5 minutes and use vegetarian seasoning to taste according to your preference.
