How to make Herbal Pig Tail Hotpot

Prepare the pig tail
After buying the pig tail, you wash it thoroughly with water and then soak it in diluted salt water for 10 minutes. After that, rinse it again with clean water and use a knife to cut it into pieces about the thickness of a finger.
Next, put the pig tail into a pot of boiling water and blanch it for about 1 minute, then remove it.

Sauté the pig tail
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it. When the oil is hot, add 1 small onion, finely chopped, and 1 clove of garlic, minced, and sauté until fragrant and golden.
Then, add the pig tail along with 2 tablespoons of annatto oil and stir-fry over high heat for about 2 – 3 minutes until the meat turns golden, then add 30ml of water, 2 teaspoons of seasoning, 2 teaspoons of pepper, and 2 tablespoons of fish sauce, and stir-fry for about 30 seconds.
