Ingredients for Mixed Chè using an electric pressure cooker Serves 10 people

Whole green beans 100 gr White beans 100 gr Mung beans 100 gr Black beans 60 gr Peanuts 30 gr Potato starch 60 gr Coconut milk 400 ml Pandan leaves 4 leaves Cornstarch 5 teaspoons ( 1 teaspoon for the chè/ 4 teaspoons for the coconut milk) Rock sugar 250 gr Sugar 4 teaspoons Salt 1/2 teaspoon

How to choose good beans

  • To choose good beans, select those with beautiful, shiny, smooth skin, and even color.
  • Choose beans that are of uniform size, plump, and not shriveled or deformed.
  • Avoid selecting beans with spots, stripes, or wrinkled skin as these are of poor quality.

Where to buy coconut milk

How to make Mixed Sweet Soup using an Electric Pressure Cooker

  • Stew the beans

    Wash all types of beans thoroughly and let them drain. Then, add 2 liters of water to the pot and soak the beans for about 1 hour.

    After soaking the beans for 1 hour, place the beans in the pressure cooker, set the function to “Beans/ Peas”, and stew the beans for 40 minutes.

  • Cook the sweet soup

    While waiting for the beans to stew, soak the tapioca flour in water for 15 minutes and then wash it thoroughly.

    Place a pot on the stove and add 1.5 liters of water along with the soaked tapioca flour, pandan leaves, and 250g of rock sugar, and cook on high heat.

    Once the rock sugar has completely dissolved and the water starts to simmer, indicating that the tapioca flour is becoming soft, add the softened beans to the pot and cook on low heat, gently simmering.

    Continue by adding 200ml of coconut milk to the pot and stir well.

    When the sweet soup mixture starts boiling, dissolve 1 teaspoon of cornstarch in 2 teaspoons of water and slowly pour it into the pot while stirring with a spoon until the mixture thickens, then turn off the heat.

    Note: When pouring in the cornstarch mixture, you should do it slowly while stirring to prevent the starch from settling at the bottom and sides of the pot.

  • Making Coconut Milk

    Pour the remaining 200ml of coconut milk into a pot along with 4 teaspoons of sugar, 1/2 teaspoon of salt, and 4 teaspoons of cornstarch (you can add a little pandan leaf for a more fragrant coconut milk).

    Stir continuously until the coconut milk mixture boils, then turn off the heat.

Tips for successfully making mixed dessert:

  • You need to soak the beans for about 1 hour before cooking so that the beans cook more easily and are softer, richer, and creamier when eaten.
  • To ensure the dessert is delicious, you should remove any spoiled beans that float to the surface while soaking, keeping only the whole, unbroken beans. Spoiled beans will taste bitter when eaten, making the final product less tasty.
  • Cook the coconut milk until just boiling, without letting it boil for too long, as the coconut milk will form a film and clump together, making it grainy and losing its natural rich aroma when eaten with the dessert.

How to store mixed dessert:

  • After cooking, separate the dessert from the coconut milk, then place it in an airtight container and store it in the refrigerator.
  • The storage time for the dessert in the refrigerator is 1 to 2 days.
