How to Make Quinoa Milk (Buckwheat) with Cashew Nuts

Soak the nuts
Soak the Quinoa in a bowl of water for about 4 hours. Fresh cashew nuts should also be soaked in water for about 2 hours.
Note: To prevent the soaked nuts from turning sour, you should change the water about 2 – 3 times during the soaking process

Cook the Quinoa
After soaking the Quinoa for the required time, rinse it briefly and wash it clean with water. Then, put the Quinoa into a rice cooker and cook it like you would cook rice.
Note:
- You should cook Quinoa with a ratio of Quinoa to water of 1:1 to achieve the desired texture.
- To keep the grains fluffy and soft, you need to fluff the Quinoa right after it’s cooked.

Blend the seed mixture
Add the cooked Quinoa, cashews, flesh of 5 dried dates along with 500ml of filtered water and blend until smooth.
After blending, strain the mixture through a sieve to remove any residue and larger particles, making the milk smoother.

Cook the Quinoa Milk
Place a pot on the stove, add the seed milk along with 400ml of coconut milk and bring to a boil.
Note: To prevent the milk from burning and settling, cook the milk on low heat and stir continuously.
Once the milk boils, turn off the heat and let it cool.

Finished Product
Quinoa milk when completed will have a rich, delicious flavor from the nuts along with the appealing taste of quinoa and coconut milk. The milk will taste better when served cold.
How to Store and Notes When Using Quinoa Cashew Milk
- After cooking, pour the quinoa cashew milk into a tightly sealed glass jar and let it cool. Storing the milk in the refrigerator will keep it for about 2 days.
- You should adjust the quantity accordingly when cooking the milk to ensure the amount is enough for short-term use. Milk stored for too long may sour and separate, making it less tasty.
- Quinoa cashew milk should only be given to children over 1 year old. For children under 1 year old, due to their still weak digestive system, do not add cashews and coconut milk when cooking. Simply cooking the milk with quinoa and dates is already delicious enough.
