- You should choose female beef instead of male beef; beef with bright red color mixed with some white veins will taste better.
- Additionally, good beef usually isn’t too fine, has soft and small fibers; when pressed gently with your hand, you can feel its elasticity; when you release your hand, the beef will return to its original state.
- Avoid choosing beef with a pale green color, with some tiny white spots, that feels mushy and slimy to the touch, especially if it has an unpleasant smell.
How to choose fresh and delicious carrots
- You should choose carrots that have a bright color, are of moderate size—not too big or too small, have a straight shape, a small core inside, and feel firm in hand.
- Avoid choosing carrots with a large core inside, wilted, with many scratches or bruises due to being stored for too long; also, do not choose carrots that are crooked or misshapen.

Prepare the ingredients
Carrots that you buy should be trimmed at the ends, peeled, then washed clean and diced.
Green onions, cilantro, and rice paddy herb should be washed clean and chopped finely. Shallots should have their skins removed, washed, and minced.

Preparing the beef
The beef you buy should be rinsed with diluted salt water and then rinsed with clean water, drained, and then minced finely or you can put it in a meat grinder to grind it finely.
Then marinate the beef with 1/2 teaspoon of seasoning, 1/2 teaspoon of ground pepper, and 1 teaspoon of chopped green onion, mix well to let the spices absorb for about 5 minutes. To save time, you can buy pre-ground beef!
Place a pan on the stove, add 2 tablespoons of cooking oil, heat until boiling, then turn the heat to medium until the oil is hot, then add the shallots to fry until fragrant. Once the shallots are golden and fragrant, add the marinated beef and season with 1/3 teaspoon of salt and 1/3 teaspoon of sugar.
Tip:- For this porridge dish, you can use minced pork, minced shrimp, or chicken meat as well!
- To prevent the beef from releasing water, you must stir quickly for about 2 – 3 minutes until the beef is slightly cooked, then turn off the heat.

Cooking porridge from leftover rice
First, you put 1 bowl of leftover rice and 300ml of water into the rice cooker. Open the lid and cook for about 5 – 7 minutes until the porridge boils, then add the prepared carrots.
Stir the porridge for about 5 minutes until you see the porridge and carrots boiling vigorously, then add all the sautéed beef along with 1/2 teaspoon of seasoning and 1/2 teaspoon of monosodium glutamate, then adjust the seasoning to your family’s taste before turning off the heat.
Sprinkle chopped scallions along with 1/2 teaspoon of ground pepper on top of the porridge, scoop it into a bowl and it’s ready to enjoy.
Tip: You can use a regular pot to cook porridge, but it’s better to use a rice cooker for faster and more convenient cooking! -
