- You should choose female beef instead of male beef; beef that is bright red with some white streaks will taste better.
- Additionally, good beef is usually not too fine, the meat fibers are soft and small, when you press lightly with your hand, you can feel the elasticity; releasing your hand will return the beef to its original state.
- Avoid choosing beef that is pale green, has some tiny white spots, feels mushy and sticky to the touch, especially if it has an unpleasant fishy smell.
How to choose fresh and delicious carrots
- You should choose carrots that are bright in color, of moderate size—not too big or too small, straight in shape, with a small core and feel firm.
- Avoid selecting carrots with a large core, wilted, with many scratches or bruises from being stored for too long; also, do not choose carrots that are bent or misshapen.

How to make porridge from leftover rice

Prepare the ingredients
For the carrots, cut off the ends, peel them, then wash them thoroughly and dice.
Wash the green onions, coriander, and Vietnamese coriander, then chop them finely. Peel the shallots, wash them, and mince them.

Preparing beef
The beef you bought should be rinsed with diluted salt water and then washed again with clean water, drained, and then minced or you can put it into a meat grinder to grind finely.
Next, marinate the beef with 1/2 teaspoon of seasoning, 1/2 teaspoon of ground pepper, and 1 teaspoon of finely chopped green onion, mix well to let the spices soak in for about 5 minutes. To save time, you can buy pre-ground beef!
Place a pan on the stove, add 2 tablespoons of cooking oil, heat until boiling, turn on medium heat until the oil is hot, then add chopped shallots to sauté until fragrant. When the shallots are golden and fragrant, add all the marinated beef and season with 1/3 teaspoon of salt and 1/3 teaspoon of sugar.
Tip:- For this porridge dish, you can use minced pork, minced shrimp, or chicken as well!
- To prevent the beef from releasing water, you need to stir quickly for about 2 – 3 minutes until the beef is slightly pink, then turn off the heat.

Cooking porridge from leftover rice
First, add 1 bowl of leftover rice and 300ml of water into the rice cooker. Open the lid and cook for about 5 – 7 minutes until the porridge starts boiling, then add the prepared carrots.
Stir the porridge for about 5 minutes until it and the carrots are boiling vigorously, then add all the stir-fried beef along with 1/2 teaspoon of seasoning and 1/2 teaspoon of monosodium glutamate, then adjust the taste to suit your family’s preference and turn off the heat.
Sprinkle chopped green onions and 1/2 teaspoon of ground pepper on top of the porridge, serve it in a bowl, and it’s ready to enjoy.
Tip: You can use a regular pot to cook porridge, but it’s recommended to use a rice cooker for faster and more convenient cooking! -
