How to choose good sake
- You should choose sake fruits that are yellow-green, with all the spikes opened; when cooked, the sake will have a soft and rich texture.
- Avoid selecting those with darkened or bruised skins, as these fruits are prone to becoming tough after cooking.
- If you accidentally buy immature, hard sake, you can wait for 2 – 3 days for the fruit to wilt; when the outside skin turns brownish-yellow and feels soft when pressed, you can proceed to cook it.
How to choose fresh beets
- You should choose beets that are medium or small in size, with unwrinkled skins.
- Choose beets with a round bottom instead of flat-bottomed beets, as they will be sweeter when cooked.
- Avoid selecting beets that are wilted, bruised, or show signs of sliminess.

How to make Red Pearl Sake Dessert

Prepare and steam the sake
After buying the sake, wash it clean, let it drain, and cut each fruit lengthwise into 4 pieces.
Place a steamer pot on the stove, add the sake, and steam for about 15 minutes over high heat. Once the sake is cooked, remove it, peel off the skin, and use a serrated knife to cut it into small pieces.

Make the red pearls
Wash the beetroot, peel it, and to get a beautiful deep color, cut the beetroot into thin slices.
Put a pot on the stove, add 300ml of water and the sliced beetroot, and simmer over low heat for about 10 – 15 minutes to extract the color.
After the beetroot has released its color, turn off the heat, remove the beetroot and add 100g of tapioca flour to the beetroot water to soak for about 10 minutes to absorb the color, then remove and let it drain.
Next, add 100g of cornstarch to a bowl, then add the drained tapioca flour on top and roll it evenly so that the cornstarch coats the surface of the tapioca flour.
Continue by boiling water in a pot, once the water is boiling, add the tapioca flour and cook for about 5 minutes, until the tapioca becomes translucent and floats to the surface, then remove it and place it in a bowl. To prevent the tapioca from sticking together, add 100g of white sugar and mix well.

Cooking Sweet Soup
500g of dried coconut to extract 100ml of thick coconut milk and 500ml of diluted coconut milk.
Place a pot on the stove, add 500ml of diluted coconut milk and 200g of sticky rice, and cook for about 20 minutes over medium heat until the rice is soft, then add the already steamed sake and 500g of sugar, stirring well until the sugar dissolves.
Tip:
- To prevent the coconut milk from being overly sweet, you can add 1/4 teaspoon of salt.

Completion
After the sugar has completely dissolved, add the sago pearls and stir again to combine all ingredients, then turn off the heat.
Wait for 5 minutes after turning off the heat, then add the thick coconut milk and stir until the coconut milk is blended into the sweet soup.
Scoop the sweet soup into bowls, sprinkle some crushed roasted peanuts on top, and it is ready to enjoy.
